Beef and Guinness Stew

1. Heat 1 tablespoon oil in a Dutch oven over medium-high heat
- 2 tablespoons canola oil, divided
- 1 tablespoon butter, divided
- 1/4 cup all-purpose flour
- 2 pounds boneless chuck roast, trimmed and cut into 1-inch cubes
- 1 teaspoon salt, divided
- 5 cups chopped onion (about 3 onions)
- 1 tablespoon tomato paste
- 4 cups fat-free, less-sodium beef broth
- 1 (11.2-ounce) bottle Guinness Draught
- 1 tablespoon raisins
- 1 teaspoon caraway seeds
- 1/2 teaspoon black pepper
- 1 1/2 cups (1/2-inch-thick) diagonal slices carrot (about 8 ounces)
- 1 1/2 cups (1/2-inch-thick) diagonal slices parsnip (about 8 ounces)
- 1 cup (1/2-inch) cubed peeled turnip (about 8 ounces)
- 2 tablespoons finely chopped fresh flat-leaf parsley
Pumpkin Yeast Rolls

Combine yeast, sugar and water in a large bowl
- 1-1/2 teaspoons active dry yeast
- 1 teaspoon granulated sugar
- 1/4 cup lukewarm water
- 3 cups all-purpose flour
- 3-1/2 tablespoons unsalted butter
- 2 tablespoons light brown sugar
- 1/4 teaspoon salt
- 1 cup pureed pumpkin
- 1 egg, lightly beaten
- 1/4 cup maple syrup
- 1/4 teaspoon ground cinnamon
- 1 cup whole wheat flour
Black & White Chili

1. Spray large saucepan with cooking spray; heat over medium heat until hot
- Nonstick cooking spray
- 1 lb chicken breast tenders, cut into 3/4-inch pieces
- 1 cup coarsely chopped onion
- 1 can (15.5 oz) Great Northern Beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5) Mexican-style stewed tomatoes, undrained
- 2 tbsp Texas-style chili powder seasoning mix
Tomato Vegetable Soup

Sautee the onion, bell pepper and shallot in the olive oil
- 1 1/2 cup sweet potato
- 1 1/4 cup onion
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp basil
- 1/2 tsp parsley
- 1 tsp oregano
- 1/4 tsp black pepper
- 2 tablespoons extra virgin olive oil
- 2 celery stalks
- 1 cup bell pepper
- 1 cup haricots verts
- 1 cup grape tomatoes
- 1/2 tbsp balsamic vinegar
- 4 cups chicken stock
- 3 cups water
- 1 cup canned chopped tomatoes
- 1 shallot
- 2 tablespoons tomato paste
- (you can also add corn, carrots, and/or beans to make it really hearty)
- 1/2 tsp more salt
- 1 tsp sugar
White Bean and Artichoke Hummus

Another twist on traditional hummus
- 1 cup canned white kidney beans, drained and rinsed
- 4 canned artichoke hearts, drained and chopped
- 2 Tbsp tahini
- 1 1/2 Tbsp olive oil
- 2 Tbsp lemon juice
- 1 1/2 tsp finely chopped garlic
- 1/4 tsp ground cumin
- pinch of salt and freshly ground black pepper
- 1/4 chopped cilantro
Easy Peasy Pizza

This pizza recipe is partly due to the project I’m working on
- 150 g Self-raising flour (plain flour could be used but the base won’t rise as much)
- 20 g butter or marg
- 60 ml milk
- 6 tbsp pizza sauce or tomato ketchup
- handful of grated cheese
- toppings (eg. sliced cherry tomatoes, ham, pepper)
- mixed herbs
Gingerbread

This gingerbread is so good, just like grandma used to make - minus the sugar
- 1/2 cup pecans or walnuts, chopped finely
- 1/2 cup agave nectar or fruit sweetener
- 1/4 cup canola oil
- 2 eggs
- 1/2 teaspoon grated orange rind
- 1 teaspoon vanilla extract
- 1 1/2 cups brown rice flour or sorghum flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon cloves
- 1 cup unsweetened applesauce
Forgotten Cookies

- 1/3 cup diced sweet potato
- 1/4 cup diced potato
- 1 small onion, finely chopped
- 1 small garlic clove, finely chopped
- 1 small green chile, seeded and chopped
- 1/2 tsp ground ginger
- scant 1/4 cup green lentils
- 5-7 tbsp hot vegetable stock
- 1/2 tsp garam masala
- 5-7 tbsp hot water (optional)
- 1 tbsp low-fat plain yogurt

Mango Mahi Mahi

Place the mahi mahi in a shallow baking dish
- 4 6-ounce mahi mahi steaks
- 2 cups of mangos, peeled, seeded and diced
- 2 cups of tomatoes, diced
- 1/2 cup diced onion
- fresh cilantro to taste

- 1/3 cup freshly squeezed lime juice
