Raspberry Scones

1. Preheat the oven to 375°
- 1 . 2 cups spelt flour
- 2 . 1 tablespoon baking powder
- 3 . 1/2 teaspoon salt
- 4 . 1/3 cup canola oil
- 5 . 1/3 cup agave nectar
- 6 . 1 tablespoon pure vanilla extract
- 7 . 1/3 cup hot water
- 8 . 1 cup fresh raspberries
Coconut Strawberry Cake

1. Preheat oven to 350. Spray springform pan with bakers spray
- 1 pkg white cake mix
- 1 tsp almond extract
- 3/4 cup cold whole milk
- 1 pkg white chocolate pudding mix
- 1/4 cup powdered sugar
- 8 oz cool whip
- strawberry jam
- 1 cup sweetened coconut flakes

- For the glaze:
- 50 g caster sugar
- 1 level tablespoon dried yeast (make sure it's not easy blend yeast though, as that will make the dough too sticky. I used Allinson's Dried Active Yeast for mine, and they turned out perfectly. You should be able to buy this from most major supermarkets).
- 450 g plain flour
- 1 level teaspoon salt
- 1 rounded teaspoon mixed spice
- 1 rounded teaspoon cinnamon
- 75 g raisins
- 50 g cut mixed peel
- 55 ml warmed milk
- 1 egg, beaten
- 50 g butter, melted
- 2 level tablespoons granulated sugar
- 2 inches of fresh ginger, cut into thin slices
Butternut Maple Bread

Combine all dry ingredients (not including the sugars) in one large bowl
- 1 2/3 cups flour
- 2/3 cup butternut squash (bake a small squash at 350 for 1 hour, mix with 1/4 cup apple cider, 1.5 tsp pumpkin pie spice, and 2 Tbsp cinnamon)
- 1 cup dark brown sugar
- 1/2 cup white sugar
- 1/2 tsp sea salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1/3 cup oil
- 2 eggs
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 2 1/2 tbsp maple syrup

- 100 g caster sugar
- 100 g self-raising flour
- 150 g butter
- 1 egg
- Baking powder
- 1/2 tsp vanilla extract
- Ground ginger
- Goslings Black Seal Rum
- Ginger preserve or crystalised ginger
- Icing sugar
Magic Cookie Bars (Hello Dollies)

Heat oven to 350 degrees F (325 degrees for glass dish)
- 1/2 cup (1 Stick) butter, melted
- 1 1/2 cups graham cracker crumbs
- 1 (14 ounce) can Sweetened Condensed Milk
- 2 cups semisweet chocolate morsels
- 1 1/3 cups flaked coconut
- 1 cup chopped nuts (I used walnuts)
- NOTE: You can use butterscotch morsels for a different twist

If using regular ricotta, press through fine strainer before using
- 1-1/2 cups (375 mL) all-purpose flour
- 3 tbsp (45 mL) granulated sugar
- 1 tsp (5 mL) baking soda
- 1/4 tsp (1 mL) baking powder
- 1/4 tsp (1 mL) salt
- 3/4 cup (175 mL) extra-smooth ricotta cheese
- 1 egg
- 1 cup (250 mL) milk
- 1/4 cup (50 mL) unsalted butter, melted
- 1-1/2 tsp (7 mL) finely grated lemon rind
- 3 tbsp (45 mL) lemon juice
- 1 cup (250 mL) fresh blueberries
- 2 tbsp (25 mL) vegetable oil

1. Sift Flour; measure and add baking powder, salt and sugar
- 2 cups flour
- 3 tsp baking powder
- 2 tbsp sugar
- 1 tsp salt
- 1 egg
- 1 cup milk
- 2 tbsp butter
- 5 tart apples, pared and sliced
Rice Pilaf

1. In heavy saucepan, combine olive oil, onion, garlic, and celery
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 cup chopped celery
- 2 cups uncooked long-grain rice

Yams: Fill a large pot half full with water
- Yams:
- 4-5 yams (you could sub in sweet potatoes if you prefer but the yams are more vibrant)
- 1/4-1/3 cup heavy whipping cream (not whipped)
- 1/3 cup brown sugar
- 3/4 stick butter
- 1 teaspoon salt
- Topping:
- Scant 2 cups finely chopped pecans
- 1 1/4 cup brown sugar
- 3/4 stick butter, room temp (you don't want it too soft)
- 2 1/2 tablespoons flour
