Chocolate Kahlua Cupcakes

To make the cupcakes, preheat the oven to 350˚ F
- For the cupcakes:
- ¾ cup unsweetened cocoa powder
- 1 tbsp. instant espresso powder
- 1 ½ cups all-purpose flour
- 1 ½ cups sugar
- 1 ½ tsp. baking soda
- ¾ tsp. baking powder
- ¾ tsp. salt
- 2 large eggs
- ¾ cup warm water
- ¾ cup buttermilk
- 3 tbsp. vegetable oil
- 1 tsp. vanilla extract
- For brushing the cupcakes:
- Kahlua liqueur
- For the frosting:
- 12 tbsp. unsalted butter, at room temperature
- 4 cups confectioners’ sugar, sifted
- 7-8 tbsp. Kahlua liqueur
- 2 tbsp. heavy cream
Peppermint Mocha Cupcakes

To make the cupcakes, preheat the oven to 350° F
- For the cupcakes:
- 2 2/3 cups all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 2-3 tsp. espresso powder
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup whole milk
- 1 cup strong brewed coffee
- 1 tsp. peppermint extract
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 large eggs
- For the frosting:
- 6 large egg whites
- 1 ¾ plus 2 tbsp. granulated sugar
- 1 ½ cups (3 sticks) unsalted butter, at room temperature
- 4 tsp. peppermint extract
- 1-2 tsp. vanilla extract
Lentil Soup

Lentils are the fast food of the legume world; they take only about 30 minutes to cook
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 stalks celery, chopped
- 2 cups lentils, sorted
- 1 potato, peeled and chopped
- 4 cups water
- 3 cups Chicken Stock
- 1/2 tsp dried thyme leaves
- 1/2 tsp dried marjoram leaves
- 1/2 tsp salt
- 1/8 tsp pepper
Eggless Mayonnaise

By whipping oil into mustard, you can create a mayonnaise that doesn't contain eggs; quite a feat!
- 1/2 cup Dijon mustard
- 1 1/4 cups vegetable oil
- 1/8 tsp pepper
- 1/2 tsp paprika, if desired
Caribbean Sweet Potato & Bean Stew

Slow Cooker Directions 1
- 2 medium sweet potatoes (about 1 pound), peeled and cut into 1" cubes
- 2 cups frozen cut green beans
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14 oz) vegetable broth
- 1 small onion, diced
- 2 tsp Caribbean jerk seasoning
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1/3 cup slivered almonds, toasted*
- Hot pepper sauce (optional)
- *To toast almonds, spread in single layer on baking sheet. Bake in preheated 350F oven 8 to 10 minutes or until golden brown, stirring frequently.
Sumptuous Chicken Stir Fry

In a pain, use a little bit of coconut oil and tamari sauce and cook the chicken strips until cooked thoroughly
- 2 Tablespoons extra-virgin coconut oil
- 2 chicken breasts cut into strips
- 1 bunch of broccoli, cut into bite-size pieces
- 2 baby bok choy, cut into small pieces
- 3 whole carrots, cut into thin strips
- 3 stalks celery, cut into thin strips
- 2 medium onions, sliced into thin strips
- 2 red peppers, cut into strips
- 2 yellow peppers, cut into strips
- 1 cup snow peas
- 2 cloves garlic, minced
- 1/2 cup organic extra-virgin olive oil
- 1 cup water
- Tamari sauce to taste
Aunt Marilyn's Cinnamon French Toast Casserole

1. Place bread slices in greased 9 x 13 inch glass baking dish or casserole
- 1 large loaf French bread, cut into 1.5" slices
- 3 1/2 cups milk
- 9 eggs
- 1 1/2 cups sugar
- 1 tbsp vanilla
- 1/2 tsp salt
- 6 to 8 medium baking apples, such as McIntosh or Cortland, peeled and sliced
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Powdered sugar
Strawberry Sorbet

Easy Peasy Pitta Bread

- 300 g strong white flour
- 200 g plain flour
- 1 level tsp easy-blend yeast
- 1 level tbsp caster sugar

- 325 ml warm water
