Chicken Gumbo

1. Heat oil in large saucepan over high heat
- 3 tbsp vegetable oil
- 1 lb boneless skinless chicken breasts, cut into 1" pieces
- 1/2 lb smoked sausage, cut into 3/4" slices
- 1 bag (16 oz) Frozen Broccoli, corn and Red pepper mix
- 1 can (14.5 oz) stewed tomatoes
- 1.5 cups water
- *For a spicy gumbo, use andouille sausage. Any type of kielbasa or turkey kielbasa can also be used.

- 75 g cold butter
- 1-2 tbsp cold water
- Filling
- 500 g pumpkin or squash
- 100 g frozen spinach (or 200g fresh)
- 1 onion
- 2 cloves of garlic
- 2 tsp curry powder
- 2 tsp cumin seeds
- 2 tbsp olive oil
- 3 eggs
- 100 ml double cream
- 150 ml milk
- Salt & pepper
Cranberry-Port Fudge Brownies

In a small saucepan, melt chocolate and butter; stir until smooth
- 4 ounces unsweetened chocolate, chopped
- 1/2 cup butter, cubed
- 1-1/2 cups sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup dried cranberries
- 1/2 cup tawny port wine

Black Olive Tahini Spread

This is similar to a hummus dip, but with black olives added
- 1 cup canned chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 Tbsp water
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- 1 tsp finely chopped garlic
- 1/2 tsp hot chili sauce
- 1/3 cup finely diced canned black olives
- 2 Tbsp chopped fresh basil or parsley
Baked Rice Pilaf

For a vegetarian side dish, use Vegetable Broth or water instead of the chicken stock
- 2 cups Chicken Stock
- 1/2 cup water
- 2 tbsp olive oil
- 1 onion, chopped
- 1/2 cup shredded carrots
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 tsp dried marjoram leaves
- 1 1/4 cups long-grain white rice

- 1 cup white sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon milk
- 1 tablespoon vanilla
- 2 cups semisweet chocolate chips

- 1/2 tsp finely chopped garlic
- 1/2 tsp hot chili paste
- 2 Tbsp chopped parsley
