Spaghetti Sauce

A combination of fresh and canned tomatoes creates a real depth of flavour in this simple recipe
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chopped mushrooms
- 1 cup shredded carrots
- 2 (14 oz) cans diced tomatoes, undrained
- 1 (6 oz) can gluten-free tomato paste
- 6 plum tomatoes, chopped
- 1 1/2 cups water
- 1 tsp dried basil leaves
- 1/2 tsp dried oregano leaves
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 bay leaf
Crash Hot Potatoes

1.Bring a pot of salted water to a boil
- 12 whole New Potatoes (or Other Small Round Potatoes)
- 3 Tablespoons Olive Oil
- Kosher Salt To Taste
- Black Pepper To Taste
- Rosemary (or Other Herbs Of Choice) To Taste

- 4 large Finnish yellow potatoes, cut into 1" pieces
- 1 large onion, chopped
- 5 cloves garlic, chopped
- 1 tablespoon peeled and chopped fresh ginger
- 1 cup water
- 1 teaspoon ground turmeric

- 4 tsp (18 mL) baking powder
- 4 tsp (18 mL) cinnamon
- 2 tsp (10 mL) baking soda
- 1-1/2 tsp (7 mL) salt
- 1 tsp (5 mL) nutmeg
- 6 eggs
- 1-1/2 cups (375 mL) granulated sugar
- 1-1/2 cups (375 mL) packed brown sugar
- 1-1/2 cups (375 mL) vegetable oil
- 2 tsp (10 mL) vanilla
- 4 cups (1 L) grated carrots
- 2 cans (each 14 oz/398 mL) crushed pineapple, drained

1. In large pot of boiling salted water, cook potatoes until fork-tender, about 10 minutes
- 3 lb (1.4 kg) mini red potatoes, quartered
- 1/3 cup (75 mL) extra-virgin olive oil
- 1 cup (250 mL) finely chopped onion
- 3 cloves garlic, minced
- 1 tsp (5 mL) hot pepper flakes
- 1/2 tsp (2 mL) dried oregano
- 4 anchovy fillets, finely chopped
- 1/2 cup (125 mL) thinly sliced oil-packed sun-dried tomatoes
- 1/2 cup (125 mL) chopped pitted oil-cured olives
- 3 tbsp (45 mL) capers, drained, rinsed and chopped
- 1/3 cup (75 mL) white wine vinegar
- 1/3 cup (75 mL) chopped fresh parsley
Speedy Broccoli Soup

1. Cut the broccoli into florets and set aside
- 12 oz/350 g head of broccoli
- 1 leek, sliced
- 1 celery stalk, sliced
- 1 garlic clove, crushed
- 12 oz/350 g potato, diced
- 4 cups vegetable stock

- freshly ground black pepper
- crusty bread or toasted croutons to serve

Dulce de Leche Brownies

I thought I’d share this recipe for Dulce de Leche Brownies
- 8 tablespoons (115g) salted or unsalted butter, cut into pieces
- 6 ounces (170g) bittersweet or semisweet chocolate, finely chopped
- 1/4 cup (25g) unsweetened Dutch-process cocoa powder
- 3 large eggs
- 1 cup (200g) sugar
- 1 teaspoon vanilla extract
- 1 cup (140g) flour
- optional: 1 cup (100 g) toasted pecans or walnuts, coarsely chopped
- 1 cup Dulce de Leche (or Cajeta)
Multi Mince

My multi mince is different every time I make it depending as to what is in the house and what needs to be eaten
- 1 onion diced
- 1 garlic clove
- 400 g beef steak mince
- 3 rashers of smoked back bacon, chopped
- 2 large carrots, chopped
- 3 sticks of celery, chopped
- handful of mushrooms, chopped
- 1 red pepper, sliced
- 1 beef oxo cube
- 1 tin of chopped tomatoes
- 125 ml red wine
- drizzle of balsamic vinegar
- splash of Worcestershire sauce
- 2 tbsp mixed herbs
