Lemon Olive Fingerling Packages

- 1 1/2 lb fingerling or baby new potatoes
- 1/3 cup extra-virgin olive oil
- 1 1/2 tsp minced garlic
- 1/3 cup pitted and chopped Kalamata olives
- 1/4 cup finely chopped preserved lemon
- 2 tbsp packed fresh oregano

- 1 tablespoon olive oil

- 2 tbsp olive oil
- 1 clove garlic, pressed
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1 lb skinless, boneless chicken breast halves or thighs
Flounder Parcels with Fresh Herbs

1. Preheat the over to 375F
- vegetable oil spray
- 4 flounder fillets, skinned
- 6 tbsp chopped fresh herbs, dill, parsley, chives, thyme, or marjoram
- Finely grated rind and juice of 2 lemons
- 1 small onion, sliced thinly
- 1 tbsp capers, rinsed (optional)
- salt and pepper
S'mores Chocolate Chip Cookies

1. Preheat your oven to 375 degrees and line a baking sheet with parchment paper
- 1 1/2 Cup all purpose flour
- 3/4 Cup graham crackers smashed into tiny pieces
- 1 Teaspoon baking soda
- 1 Teaspoon salt
- 1 sprinkle of cinnamon
- 1 Dash of nutmeg
- 2 sticks of softened unsalted butter
- 3/4 Cup dark brown sugar
- 3/4 Cup white sugar
- 1 Teaspoon real vanilla extract
- seeds from one vanilla bean
- 2 large eggs at room temperature
- 1 3/4 Cup of mini chocolate chunks
- 2 Cup mini marshmallows
- 1-2 hershey bars in pieces

1. Preheat oven to 450°. Stir together first 4 ingredients in a large bowl
- 2 cups all-purpose flour

- 1/2 teaspoon salt

Spanish Potato Omelette

Heat oil in large non-stick skillet over medium heat
- 2 tbsp olive oil
- 3/4 cup chopped onion
- 4 cups Yukon Gold potatoes, peeled and cubed in 1/2-inch (1.5 cm) pieces
- 1/2 tsp salt

- 1/4 cup finely chopped sweet red pepper (optional)

- 2 tablespoons extra-virgin olive oil
- 1 large onion, chopped finely
- 1 large red bell pepper, chopped
- 1/2 large green bell pepper, chopped
- 1/2 cup celery, chopped
- 1 small leek, chopped
- 1 (10 oz) can diced green chiles
- 1/2 pound fresh mushrooms, cleaned and sliced
- 5 cloves garlic, chopped
- 4 cups vegetable broth
- 1 1/2 cups long-grain brown rice
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon dried thyme
- 1 (14.5 oz) stewed tomatoes with oregano and basil

- 2 cups frozen blueberries, thawed
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
- 1 tablespoon arrowroot

- Topping:
- 3 cups (750 mL) all-purpose flour
- 1 tbsp (15 mL) baking powder
- 3/4 tsp (4 mL) salt
- 1/2 tsp (2 mL) grated nutmeg
- 1/2 cup (125 mL) 10% cream
- 1/2 cup (125 mL) whipping cream
- 1 tsp (5 mL) vanilla
- 3 eggs
- 1 cup (250 mL) granulated sugar
- 4 cups (1 L) canola oil or safflower oil or vegetable oil, for deep-frying, enough to submerge food
