Spice-Rubbed Roast Chicken

North African inspired spices give chicken a heady taste of the exotic
- 1 Chicken (3.5 to 5lb)
- 2 small sticks cinnamon
- 1 small onion, halved
- 2 tbsp extra-virgin olive oil
- 2 cloves garlic, minced
- 1 tbsp chopped fresh oregano (or 1 tsp/5 ml dried)
- 1 tsp each ground cumin, coriander and allspice
- 1 tsp sweet or hot paprika
- 1/2 tsp each salt and pepper
- 2 tbsp lemon juice
Gorgeous Gooseberry Cake

Gooseberries are my absolute favourite fruit
- 125 g caster sugar, plus a bit more to sprinkle over
- 250 g plain flour, sifted
- 4 tsp baking powder
- 1 tsp ground cinnamon
- 50 g butter, cut into small dice and at room temperature
- 300-400 g fresh gooseberries, topped and tailed
- A pinch of salt
- 1 medium egg
- 100 ml milk
Mediterranean Stew

When a large crowd is coming for dinner, this is what I make
- 1/4 cup extra virgin olive oil
- 2 large onions, chopped
- 2 cloves garlic, chopped finely
- 1/2 teaspoon cayenne pepper
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1 cup carrots, sliced
- 1 cup yams, peeled and chopped
- 4 cups butternut squash, peeled and cubed
- 1 large red bell pepper, sliced
- 3 cups eggplan, cubed
- 2 cups mushrooms, stemmed and halved
- 1/2 cup currants
- 1 1/2 cups cooked garbanzo beans (save the liquid)
- 1/4 cup chopped fresh parsley

If you are looking for a high-protein meal this is it
- 1 tablespoon extra-virgin olive oil
- 1-2 tablespoons mustard seeds
- 1 tablespoon chile powder
- 1 1/2 teaspoons cumin seeds or ground cumin
- 1/2 teaspoon ground cardamom
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 3/4 pound mushrooms, cleaned and sliced
- 1/2 cup water
- 1 (14 oz) can organic black beans, drained
- 1 (14 oz) can cannellini beans (white kidney beans), drained
- 3 cups mushroom or chicken broth
- 1 (6 oz) can tomato paste
- 1/2 cup fresh cilantro
Stuffed Chicken Breasts with Artichoke Hearts and Goat Cheese

Preparation Heat 1 teaspoon oil in a nonstick skillet over medium heat

- 3/4 cup frozen artichoke hearts, thawed and chopped
- 1/4 cup minced shallots (about 3)
- 1/4 cup (1 ounce) crumbled goat or feta cheese
- 1 teaspoon dried herbes de Provence or thyme, divided
- 1/4 teaspoon salt, divided
- 1/4 teaspoon black pepper, divided
- 4 (4-ounce) skinned, boned chicken breast halves
- 1 cup fat-free, less-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 2 teaspoons cornstarch
- Chopped fresh parsley (optional)
- Lemon rind strips (optional)
Apple Pie Bars

In a large bowl, combine flour, salt and baking powder
- FILLING:
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 cup shortening
- 4 egg yolks
- 2 tablespoons lemon juice
- 8 to 10 tablespoons cold water
- 7 cups finely chopped peeled apples
- 2 cups sugar
- 1/4 cup all-purpose flour
- 2 teaspoons ground cinnamon
- Dash ground nutmeg
- GLAZE:
- 1 cup confectioners' sugar
- 1 tablespoon 2% milk
- 1 tablespoon lemon juice

- 1/2 cup sugar
- 1/2 cup dark corn syrup
- 3/4 cup peanut butter
- 3 cups Special K cereal
- 3 oz chocolate chips
- 3 oz butterscotch chips
Honey Yeast Rolls

In the bowl of an electric mixer fitted with the paddle attachment, combine the yeast and warm water
- 2 1/4 teaspoon instant yeast
- 1 cup warm water (105°-115° F)
- 1/4 cup honey
- 3 tablespoon canola oil
- 1 1/2 teaspoon salt
- 1 egg, lightly beaten
- 4 cups bread flour, separated
- vegetable cooking spray
- 1 tablespoon butter, melted
- 1 tablespoon honey

- 1/3 cup peanut butter
- 3 T vegetable oil

- 1/3 cup peanuts, chopped
