- 1 tbsp (15 mL) extra-virgin olive oil
- 2 zucchinis, cut into 1-inch pieces
- 1 clove garlic, minced
- 1/4 tsp (1 mL) dried oregano
- 1/4 tsp (1 mL) salt
- 1 pinch hot pepper flakes
- 1-1/2 cups (375 mL) cherry tomatoes or grape tomatoes, cut in half
- 1 pinch granulated sugar
- 1 tbsp (15 mL) thinly sliced green onions, (green parts only)
- 2 tsp (10 mL) red wine vinegar
Easy Paella

1. Heat oil and fry chicken for a couple of minutes 2
- 1 tbsp olive oil
- 2 chicken breasts (each chopped into 8)
- 4 raw King Prawns (shelled and de-veined)
- 20 mussels (washed)
- Garlic clove (chopped)
- Can of Chopped Tomatoes (drained)
- 200 g paella rice
- Pinch of saffron (or 1/2 tsp tumeric)
- 1 litre chicken stock (boiling)
- 8 cherry tomatoes
- 110 g frozen peas
- salt and pepper

Maple Chicken Curry

1. Slice chicken into strips, and fry on stove top until almost cooked
- 1/2 cup maple syrup
- 1/2 cup heavy cream or half and half
- 1/2 pkg (approx 4 oz) of cream cheese
- 3-4 tablespoons curry paste
- 1 chicken breast per person, cut into strips
- 1 cup chicken broth
- 1 onion, diced
- desired veggies (bell peppers, mushrooms, zucchini)
- 2 cups of uncooked rice, or you can substitute the rice with penne pasta if desired
