1. In a bowl, whisk flour and milk until smooth
- 1 1/2 cup All-purpose flour
- 2 cups Milk
- 2 Eggs
- 1 tbsp Granulated sugar
- 1 cup 35% whipping cream
- 2 tbsp Icing sugar
- 1/2 tsp Vanilla extract
- 1 tbsp Vegetable oil
- 1 tbsp Butter
- 2 Compliments Organic Gala Apples, peeled and sliced into 1/2-inch (1 cm) slices
- 3 tbsp Unsalted butter
- 3 tbsp Honey
- 1/2 cup Compliments Chopped Pecans
- 1/2 cup Frozen Compliments Wild Blueberries
Warm Chutney Chicken Salad

1. Spray medium nonstick skillet with cooking spray
- Nonstick olive oil or cooking spray
- 6 oz boneless skinless chicken breasts, cut into bite-size pieces
- 1/3 cup mango chutney
- 1/4 cup water
- 1 tbsp Dijon Mustard
- 4 cups packaged mixed salad greens
- 1 cup chopped peeled mango or papaya
- Sliced Green Onion
Snow Day Skillet Cookie

1. Heat oven to 350°F. Whisk together the flour, baking soda, and salt
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- ¾ cup packed light brown sugar
- ½ cup sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 ½ cups mixed milk and semisweet chocolate chips

In England it is traditional to make a simnel cake to celebrate Easter
- Marzipan
- Makes 250g
- 125 g ground almonds
- 60 g icing sugar
- 1 tsp lemon juice
- 1 egg, beaten well (you won’t use all of it)

- 140 g unsalted butter, cubed
- 175 g golden caster sugar
- 250 ml orange juice
- 75 g dried apricots, quartered
- 275 g mixed fruit
- 220 g glace cherries
- 200 g marzipan (see above)
- 300 g plain flour
- 2 tsp baking powder
- 2 tsp mixed spice
- 2 eggs, lightly beaten

- 2 packs of ready rolled puff pastry
- 500 g suet-free mincemeat
- 1 egg white, lightly beaten

Sauteed Peas

- 1 tbsp olive oil
- 2 shallots, minced
- 3 cloves garlic, minced
- 1 (16 oz) bag frozen peas
- 2 tbsp Vegetable Broth
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 tsp dried thyme leaves
Fudge Scotch Ring

Melt the chips and the condensed milk in the microwave
- 1 (6 oz.) pkg. semi sweet chocolate chips
- 1 (6 oz.) pkg. butterscotch chips
- 1 can sewwtened condensed milk
- 1 c. chopped walnuts
- 1 c. walnut halves
- 1/2 t. vanilla
Oatmeal Pudding Cookies

# Preheat oven to 350 degrees F (175 degrees C)
- 1 * 1 cup butter flavored shortening
- 3/4 * 3/4 cup packed brown sugar
- 1/4 * 1/4 cup white sugar
- 1 * 1 (3.5 ounce) package instant vanilla pudding mix
- 2 * 2 eggs
- 1 1/4 * 1 1/4 cups all-purpose flour
- 1 * 1 teaspoon baking soda
- 3 1/2 * 3 1/2 cups rolled oats
- 1 * 1 cup raisins (optional)

- *substituted 1 1/2 cups applesauce for the butter and eggs and used sugar-free butterscotch pudding mix. The cookies were soft and delicious as well as fat-free!
- **added 1 tsp vanilla, 1/2 tsp salt, and 1/2 tsp cinnamon because I was afraid they would be too bland. I cut the oatmeal to about 2.5 cups.
Grilled Lemon Herb Trout for Two

Sprinkle inside of fish with half each of the salt and pepper
- 1 whole trout, cleaned (about 2 lb/1 kg)
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
- 1 lemon
- 2 bay leaves
- 10 fresh parsley sprigs
- 2 fresh thyme sprigs
- 1 tbsp (15 mL) extra-virgin olive oil

1. Stir cocoa and butter in bowl until smooth; stir in sugar
