BEET PICKLES WITH HORSERADISH
By Sube
Mix white sugar, vinegar, salt and pepper and bring to a boil
- 7 quarts (28 cups) beets (cooked and put through food chopper)
- 1 cup horseradish ( I use prepared Horseradish)
- 4 cups white sugar
- 4 cups white vinegar
- 2 Tablespoons salt
- 2 Teaspoons pepper
PORK TENDERLOIN

Wrap the tenderloin pieces in bacon
- 3 pounds Pork Tenderloin (1 Pkg. Of 2 Tenderloins), Cut Into 4 Pieces Total
- 1 pound Bacon
- 3/4 cups Soy Sauce
- 1 Tablespoon Minced Onions
- 1/2 teaspoons Garlic Salt
- 1 Tablespoon Wine Vinegar Or White Vinegar
- 1/4 teaspoons Salt
- 1 dash Pepper
- 3/4 cups Brown Sugar
PUMPKIN PIE

Mix sugar, cinnamon, salt, ginger and cloves in small bowl
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 can 100% pure pumpkin
- 1 can Evaporated Milk
- 1 unbaked 9-inch deep dish pie shell
- Whipped cream
THAI CHICKEN RICE PAPER ROLLS

These rice paper rolls are really healthy and make a lovely change now the warmer weather has arrived
- INGREDIENTS (Makes 12 rice paper rolls)
- MINCE MIXTURE
- 1 tablespoon olive oil
- 500 g chicken mince
- 1 teaspoon minced/fresh ginger
- 3 cloves garlic crushed
- 1 fresh long red chilli, deseeded, finely chopped
- 3 tablespoons oyster sauce
- 2 tablespoons fish sauce
- 1 tablespoons cornflour
- 2 tablespoons water
- FILLINGS
- 100 g vermicelli rice
- 12 rice paper rolls
- 2 large carrots, peeled and grated
- 1/4 Iceburg lettuce, shredded finely
- 4 tablespoons fresh mint leaves, shredded
- 4 tablespoons fresh coriander, shredded
- VIETNAMESE DIPPING SAUCE
- 1 tablespoon fish sauce
- 1 tablespoons fresh lime juice
- 1 teaspoon rice wine vinegar
- 1 clove garlic, finely chopped
- 2 teaspoons caster sugar
- 1 long red chilli, de-seeded and finely chopped
PINEAPPLE DELIGHT

1. Mix crumbs with melted and put 1/2 in bottom of pan
- 2-1/2 cup of graham crumbs
- 1/2 cup melted butter
- 2 eggs
- 1-1/2 icing sugar
- 1/2 cup of butter
- 1 teaspoon vanilla
- 1 cup of cool whip or whipped cream
- 1 can crushed pineapple, drained
CAULIFLOWER SOUP

1. In a large bowl, combine the cauliflower, carrot, celery, water and bouillon
- 1 medium head cauliflower, broken into florets 1 medium carrot, shredded
- 1/4 cup chopped celery 2 1/2 cups water
- 2 teaspoons chicken or 1 vegetable bouillon cube 3 tablespoons butter
- 3 tablespoons all-purpose flour 3/4 teaspoon salt
- 1/8 teaspoon pepper 2 cups 2% milk
- 1 cup (4 ounces) shredded cheddar cheese
ZUCCHINI RELISH 'SWEET'

1. Place the zucchini and onion in a large, non-metallic bowl, and sprinkle the salt overtop
- 12 cups shredded unpeeled zucchini
- 4 cups chopped onion
- 5 tablespoons canning salt
- 1 red pepper, chopped
- 1 green bell pepper, chopped
- 6 cups white sugar
- 2-1/2 cups vinegar
- 1 tablespoon cornstarch
- 3/4 teaspoon ground nutmeg
- 3/4 teaspoon ground turmeric
- 1-1/2 teaspoons celery seed
- 1/2 teaspoon ground black pepper
MANDARIN ORANGE SALAD

Mix together Cool whip and Instant Vanilla Pudding (do NOT make the pudding, just use it dry
- 1 package Vanilla Instant Pudding Mix (use dry)
- 1 large can crushed pineapple (undrained)
- 2 medium/Large cans Mandarin Oranges, drained
- 1 8 oz. Cool Whip
BEEF & BELL PEPPER STEW

Dust beef cubes in flour, shock off excess, brown meat in pan in oil, salt and pepper
- 1-1/2 beef, cubed (1 pound)
- 3/4 tsp salt
- 1/2 tsp pepper
- 1-1/2 tbsps flour
- 4 tbsps olive oil
- 4 garlic cloves (sliced)
- 1/4 tsp red pepper flakes
- 3 large bell pepper (red, green, yellow), coarsely chopped
- 1 onion, chopped
- 2 tsps thyme
- 2 bay leaves
- 1 cup dry red wine
- 3 cups beef stock
- 2 cups tomato sauce
- 2 tbsps fresh Italian Parsley or basil
PHILADELPHIA VANILLA MOUSSE CHEESECAKE

Heat oven to 325 F. Mix wafer crumbs and butter, press onto bottom of 9-inch springform pan
- 40 Nilla Wafers, crushed (about 1-1/2 cps)
- 3 tbsp butter or margarine, melted
- 4 pkg (8 oz. each) Philadelphia Cream Cheese, softened, divided
- 1 cup sugar, divided
- 1 tbsp plus 1 tsp vanilla, divided
- 3 eggs
- 1 tub (8 oz.) Cool Whip
- Whipped Topping, thawed
