CORN CASSEROLE
By Sube
Combine all ingredients and pour into a greased casserole dish
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 2 eggs beaten
- 1/2 cup butter, melted
- 4 heaping tablespoon all purpose flour
- 2 tablespoons sugar
- 1/4 cup diced red pepper
- 1 cup whole milk
- 1/2 cup shredded cheese
- 1/4 tsp each salt and pepper
BEST BLUEBERRY MUFFINS

Preheat the oven to 375 degrees
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 stick butter (1/2 cup)
- 1 cup sugar
- 2 large eggs
- 1-1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup milk
- 2-1/4 cups fresh blueberries
- 2 tablespoons demerra sugar or turbinado sugar
SALISBURY STEAK MEATBALLS WITH GRAVY AND MASHED POTATOES

1. Add all the meatball ingredients (excluding the olive oil) to a large bowl and mix well, use your hands
- FOR MEATBALLS:
- 1-1/2 lb lean ground beef
- 1/2 cup breadcrumbs, used Pablo
- 1 egg
- 1/4 cup ketchup
- 1/4 cup coarse grain mustard
- 1 tbsp Worcestershire sauce
- 1 tsp seasoning salt
- 1/2 tsp pepper
- 1 tsp onion powder
- 2 tbsp olive oil (for frying)
- FOR GRAVY:
- 2 tbsp butter
- 1 large onion, chopped
- 1 tbsp Worcestershire sauce
- 1 cup beef broth or chicken broth
- 2 tbsp cornstarch
- 1/2 tsp seasoning salt
- 1 tbsp ketchup
- Parsley for garnish
- FOR MASHED POTATOES
- 5 large potatoes, peeled and chopped into 1 inch cubes
- 4 tbsp (1/2 stick) unsalted butter
- 1/4 to 1/2 cup skim milk
- 1/4 cup light cream cheese
- salt and pepper to taste
CRUMB CAKE

Bake 30 minutes at 375 degrees
- ADD:
- 2 cups flour
- 1 cup sugar
- 3/4 cup butter or margarine
- Mix into crumbs and take out 1 cup.
- 1 cup sour milk or sour cream
- 1 egg
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ground cloves
- 1 cup raisins
MUSTARD PICKLES MILLIONAIRE SAUCE

- 8 cups white sugar
- 1 cup flour
- 1/3 cup dry mustard
- 1 tsp Tumeric
- 1 tsp celery seed
- 1 tsp Mustard seed
- 1 bag of pickling spice tie in cheese cloth (can use J-cloth)
TROPICAL CHICKEN

This hearty, comfort dish makes a convenient all-in-one meal
- 1 broiler/fryer chicken (3-1/2 to 4 lbs.), cut up
- 3 Tbsps. canola oil, divided
- 3/4 cup chopped onion
- 2 garlic cloves, minced
- 3 medium tomatoes, peeled and chopped
- 3 cups fresh or canned pineapple chunks
- 1 can ( 8 ounces) sliced water chestnuts, drained
- 1/4 cup pineapple juice
- 1 red hot pepper (4-1/2 to 5 inches), seeded and chopped
- 3/4 Tsp. salt
- 1/4 Tsp. pepper
- 1/2 pound fresh snow peas
- 1 Tbsp. minced chives
- Hot cooked rice
ZUCCHINI RELISH

Pour into jar and steam
- IN SEPARATE POT BOIL:
- 12 cups zucchini - grated
- 4 large onions, chopped
- 2 green peppers, chopped
- 2 red peppers, chopped
- Sprinkle with 1/3 cup pickling salt and leave overnight.
- Rinse and drain well.
- 3 cups white vinegar
- 4 cups white sugar
- 2 tsps celery salt
- 2 tsps mustard seed
- 2 tsps Tumeric
- 5 tbsps cornstarch
- Add to relish. Bring to boil and boil altogether for 20 minutes until transparent.

- 3 tablespoons/60 g seedless tamarind paste
- 1/2 to 1 red jalapeno chile (depending on the amount of heat desired), minced
- 1 garlic clove, minced
- 2 teaspoons/5 g cornstarch
- 1/4 cup/60 g cane sugar
- For the Spring Rolls:
- 4 cups/1 liter hot water
- Eight 8-inch/21-cm-diameter Vietnamese spring roll sheets
- 8 ounces/230 g fresh crab meat
- 2 cups/160 ounces bean sprouts
- 4 green onions, cut into thin strips
- 2 carrots, peeled, cut into thin strips
- 1/2 cup (lightly packed)/15 g fresh cilantro leaves
- 1/2 cup/70 g coarsely chopped roasted unsalted peanuts
- Fresh cilantro sprigs, for garnish
