Soak anatto in cooking oil
- 3 Tbl cooking oil
- 1 Tbl anatto (atsuete)
- 2 Tbl vegetable oil
- 2 cloves garlic
- 1/2 c onlons, chopped
- 1/4 k pork, cubed
- 1 1/2 c soup stock
- 200 gm shrimps, shelled, coarsely chopped
- 1 c sweet potato, cubed
- 1 c potatoes, cubed
- 3 c cabbage, shredded
- 2 c snapbeans, strips
- 1 c chickpeas, boiled
- 1/4 c celery, finely chopped
- 4 pcs soybean curd (tokwa)
- 2 Tbl fish sauce (paris]
- 1 tsp MSG (if desired)
- 20 pcs lettuce leaves
- 20 lurnpia wrappers.
Meringue Cookies

Preheat oven to 225°F. Beat egg whites in large bowl with electric mixer on medium speed until frothy
- 4 egg whites, at room temperature
- 1/2 teaspoon Cream of Tartar
- 1 cup sugar
- 1 teaspoon Pure Vanilla Extract or use 1/2 tso vanilla 1/2 tsp mint extracts
- 25 to 30 drops assorted Food Colors
LUMPIA SAUCE

Melt sugar in a saucepan over a low fire
- 1 c sugar
- 3 c water
- 3 Tbl soy sauce
- 3 heaped Tbl cornstarch
- 1 1/2 tsp salt
Chocolate Raspberry Mousse Cake

To Make the Brownie Layer: Preheat the oven to 350 F
- For the Brownie Layer:
- 3 1/3 oz all-purpose flour (3/4 cup)
- 2 oz unsweetened cocoa powder (2/3 cup)
- 1/2 tsp salt
- 1/2 tsp baking powder
- 4 oz unsalted butter
- 7 3/4 oz granulated sugar (1 cup +2 tbsp)
- 2 eggs large, at room temperature
- 2 tsp vanilla extract
- For the Chocolate Mousse:
- 9 oz semi-sweet chocolate finely chopped
- 1 3/4 cups heavy cream divided use
- Pinch salt
- 2 tsp unflavored powdered gelatin
- 2 tbsp water
- For the Raspberry Mousse:
- 1 1/2 cups raspberries fresh
- 9 oz white chocolate finely chopped
- 1 1/2 cups heavy cream divided use
- Pinch salt
- 2 tsp unflavored powdered gelatin
- 2 tbsp water
- Pink food coloring (optional)
- For the Vanilla Mousse:
- 9 oz white chocolate finely chopped
- 1 1/2 cups heavy cream divided use
- 4 tbsp honey
- Pinch salt
- 2 tsp powdered gelatin unflavored
- 2 tbsp water
- 2 tsp vanilla bean paste (can substitute vanilla extract)
- To Finish:
- 4 oz semi-sweet chocolate finely chopped

Green-Bean Casserole

To make white sauce, melt butter in small saucepan over low heat
- 1 ½ tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups milk
- 3 to 4 teaspoons dry ranch-style salad dressing mix
- 1/4 to 1/2 teaspoon white pepper
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 1/2 cups sliced fresh mushrooms
- 1 1/4 pounds fresh green beans, cooked until crisp-

Mexican Midnight Fondue

Menu: Cheese Fondue, Shredded Lettuce with Chopped Tomatoes, Refried Beans, Caramel Custard, Sangria
- CHEESE FONDUE (BEER)
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 package (8 ounces) sharp natural Cheddar cheese, shredded
- 1 package (8 ounces) natural Swiss cheese, shredded
- 1 clove garlic, halved
- 1 can (12 ounces) beer
- Dash red pepper sauce
- Dippers (corn Bread and/or rolled tortillas)
Fondue - Tempura Batter

Beat eggs and water in blender until frothy
- 2 eggs
- 1 3/4 cup very cold water
- 1 3/4 cup unsifted flour
- 1/4 tsp salt
Meatball Soup - Bob’s (Piacente)

Sear beef with small amt of olive oil
- 3 lbs beef for meatballs – no oregano
- 1 soup bone
- 2 lbs round steak cut into cubes
- 2 bunches escarole chopped – boil for twenty minutes and rinse thoroughly (gets rid of bitterness)
- 1 lb bag carrots
- 4-5 stalks celery
- 1 large onion
- 1/3 box orzo
- Garlic salt
- Garlic powder
- Pepper
- Bay leaf
- Basil
- Parsley
Marty's Hot Wings Recipe

1. Cut off the tip of the wings and discard
- 2 ½ lbs of wings
- 1 cup flour
- 2 cups bread crumbs
- 2 Tbl Garlic Salt
- 2 Tbl Pepper
- 1 Tbl Paprika
- 2 Tbl Poultry Seasoning
- 1 Tbl Accent (you may want to omit if people are allergic to MSG)
- 1 Tbl Onion Powder
- 2 Tbl Italian Seasoning (don't need if you use Italian Seasoned Bread Crumbs)
- For hotter wings, add 1 or 2 Tbl Red Pepper Powder seasoning to taste (I usually don't do this step because they are hot enough with the Red Hot sauce).
Au Gratin Potatoes
