- Chicken Ragu:
- 8 Whole Chicken Legs (skinless)

- 1 Red Onion (sliced)
- 1 Carrot (sliced)
- 1 Stalk Celery (sliced)
- 2 Cloves Garlic (thinly sliced)
- 1 bottle Red Wine (such as Chianti)
- 1 (28 ounce) can Whole San Marzano Tomatoes
- 3 cups Chicken Stock
- 1 ounce Dried Porcini Mushroom Pieces
- 1 block Parmigiano-Reggiano (rind reserved)

- 2 tablespoons low-sodium soy sauce
- 2 tablespoons rice vinegar
- 3 scallions, chopped
- 2 tablespoons chopped garlic
- 2 tablespoons chopped shallot
- 2 tablespoons chopped ginger
- 1 sprig fresh cilantro
- 1 sprig fresh mint
- 1 Kaffir lime leaf, or 1 long strip

- 2 1/4 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 sticks butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar

- 1 tablespoon vanilla
- 1/2 cup unsweetened cocoa

Spiced Pork Roast

Preheat the oven to 400 degrees F
- 1/4 cup whole grain mustard (recommended: Maille)
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon ground allspice
- 1 tablespoon dried oregano
- 1 tablespoon brown sugar
- 2 garlic cloves, minced
- 1 (2 1/2 pound) pork tenderloin, patted dry with paper towels

Bring a large pot of salted water to a boil and cook penne 1 minute short of the package instructions
- 6 Slices Pancetta (or bacon) (cut into lardons, about 1/2 inch thick)
- 2 Cloves garlic (thinly sliced)
- 1 Can Tomato Paste
- 1/4 Cup Vodka
- 1/2 Cup Heavy Cream
- Pinch Nutmeg
- 1 Lb Penne
- 1 Piece Parmigiano Reggiano (for garnish)
Jerk Marinade

Purée 4 tablespoons oil and the next 10 ingredients in a food processor until smooth
- 6 tablespoons vegetable oil, divided
- 1/4 cup fresh lime juice
- 4 scallions, coarsely chopped
- 4 Scotch bonnet or habanero chiles, stemmed, seeded, coarsely chopped
- 3 garlic cloves, roughly chopped
- 2 tablespoons fresh thyme
- 1 tablespoon minced peeled fresh ginger
- 1 tablespoon (packed) dark brown sugar
- 2 teaspoons allspice berries
- 1 teaspoon kosher salt plus more
- 1/4 tablespoon freshly ground black pepper
- 2 tablespoons distilled white vinegar
- Habaneros and Scotch bonnets—extremely hot chiles—are available at better supermarkets and at Latin markets.
Spiced Chicken with Oranges

- 4 skinless boneless chicken breast halves
- 2 teaspoons Chinese five-spice powder
- 2 teaspoons toasted sesame seeds
- 2 tablespoons (1/4 stick) butter
- 1 medium red onion, thinly sliced
- 1/2 cup orange juice
- 3 tablespoons soy sauce
- 2 teaspoons hot pepper oil
- 2 seedless oranges, peeled and sliced crosswise into 1/2-inch-thick rounds
Hollandaise Sauce
