Apple Cider Butter

Bring apples, cider, sugar, cinnamon, cloves, and salt to a boil in a large wide pot
- 6 pounds mixed sweet and tart apples, unpeeled, uncored, chopped
- 6 cups apple cider
- 1 cup raw or granulated sugar
- 1 3-inch cinnamon stick
- 3 whole cloves
- 1/2 teaspoon kosher salt
- 1 tablespoon apple cider vinegar
Strawberry-Almond Cream Tart

Preheat oven to 350°. To prepare crust, place crackers in a food processor; process until crumbly
- Crust:
- 36 honey graham crackers (about 9 sheets)
- 2 tablespoons sugar
- 2 tablespoons butter, melted
- 4 teaspoons water

- Filling:
- 2/3 cup light cream cheese
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract

- 6 cups small fresh strawberries, divided
- 2/3 cup sugar
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice

Lemon and Prosciutto Stuffed Pork Loin

•Place pork, fat side down, on work surface with 1 short end facing you
- •1 4-pound boneless pork loin roast, trimmed
- •12 thin prosciutto slices (about 6 ounces)
- •1 large lemon, very thinly sliced
- •1/2 cup panko (Japanese breadcrumbs)
- •1/2 cup chopped fresh chives
- •1 1/2 teaspoons coarse kosher salt, divided
- •1 teaspoon freshly ground black pepper, divided
- •3 tablespoons olive oil
- •1 cup low-salt chicken broth
- •1 cup Pinot Grigio or other dry white wine
- •2 tablespoons (1/4 stick) butter

Cajun-Spiced Turkey

Cajun Spice Mix: Stir all ingredients in a small bowl to blend
- Turkey:
- 1 12–14 pound turkey, patted dry
- Kosher salt and freshly ground black pepper
- 1/2 cup Cajun Spice Mix (click for recipe)
- 1 celery stalk, coarsely chopped
- 1 green bell pepper, coarsely chopped
- 1 medium onion, coarsely chopped
- 1/4 cup (or more) olive or vegetable oil
- Cajun Spice Mix:
- 5 tablespoons kosher salt
- 2 tablespoons cayenne pepper
- 2 tablespoons garlic powder
- 2 tablespoons sweet paprika
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon freshly ground black pepper

Chicken Saltimbocca with Lemon Sauce

Place chicken between 2 sheets of plastic wrap on work surface
- 4 skinless boneless chicken breast halves
- 8 large fresh sage leaves
- 8 thin prosciutto slices (about 3 ounces)
- 1/2 cup plus 2 teaspoons all purpose flour
- 1 tablespoon butter
- 1 1/2 tablespoons olive oil
- 2 tablespoons dry white wine
- 1/2 cup low-salt chicken broth
- 2 tablespoons fresh lemon juice
Pesto Vinaigrette

Put basil, oil, cheese, vinegar, juice, garlic and zest in blender
- 1-1/2 C lightly packed basil leaves
- 1/2 C extra virgin olive oil
- 1/2 C finely grated Parmigiano Reggiano
- 3 Tbl red or white wine vinegar
- 2 Tbl fresh lemon juice
- 2 tsp garlic, finely chopped
- 1/2 tsp finely grated lemon zest
- 3/4 tsp kosher salt
- Freshly ground black pepper
Mussaman Chicken

Heat oil in a large heavy pot over medium-high heat
- 1 tablespoon vegetable oil
- 1 4–4 1/2-lb. chicken, cut into 10 pieces
- Kosher salt
- 4 medium Yukon Gold potatoes (about 1 1/2 lb.), quartered
- 2 medium red onions, cut into wedges
- 3/4 cup Massaman Curry Paste
- 12 oz. Belgian-style wheat beer
- 4 13.5-oz. cans unsweetened coconut milk
- 2 cups low-sodium chicken broth
- 1/2 cup fish sauce (such as nam pla or nuoc nam)
- 1/4 cup fresh lime juice
- 1 tablespoon palm or light brown sugar
- 1 teaspoon red chile powder

Celtic Stew

Trim fat from meats, toss with flour, salt and pepper coating evenly
- 3 pound lean stewing beef cleaned and cut into 1-1/2" to 2" cubes
- 4 cup Irish stout
- 1/2 cup Irish whiskey
- 1/2 cup mead or honey wine
- 2 Tbsp olive oil
- 3 Tbsp flour
- Salt and fresh black pepper
- 2 bay leaves
- 1 teaspoons fresh marjoram
- 1 sprig of thyme picked
- 2 large onions large dice (3/4")
- 1/2 cup carrots large dice
- 1/3 cup rutabaga large dice
- 1/3 cup turnip large dice
- 1 cup potatoes large dice
- 2 teaspoons tomato paste
