Curried Chicken Wraps

Preheat the oven to 350 degrees F
- 3 split (1 1/2 whole) chicken breasts, bone in, skin on
- Olive oil
- Kosher salt
- Freshly ground black pepper
- 1 1/2 cups good mayonnaise
- 1/3 cup dry white wine
- 1/4 cup chutney (recommended: Major Gray's)
- 3 tablespoons curry powder
- 1 cup medium-diced celery (2 large stalks)
- 1/4 cup chopped scallions, white and green parts (2 scallions)
- 1/4 cup raisins
- 1 cup whole roasted, salted cashews, chopped
- 6 tortillas
Sweeney Potatoes

Heat oven to 325 degrees. Put potatoes in a large heavy-bottomed pot and cover with cold water
- 2 1/2 pounds russet potatoes, scrubbed and cut into 1/4-inch cubes
- 1 (8-ounce) package cream cheese, at room temperature
- 1/2 cup unsalted butter, melted, plus more butter for the pan
- 1 cup sour cream
- 1/4 to 1/2 cup whole milk
- Kosher salt and ground black pepper, to taste
- 2 1/2 cups freshly grated sharp Cheddar cheese (about 8 ounces)
- Chopped fresh parsley, for garnish (optional)
Dijon Vinaigrette

Combine all. Makes 3/4 cup
- 1 Tbl fresh lemon juice
- 1 tsp Dijon mustard
- 1 Tbl white wine vinegar
- 1 garlic clove, finely minced
- 1/2 C extra virgin olive oil
- Sea salt
- Freshly ground black pepper
Tarragon-Caper Dressing

- 1/2 C mayonnaise
- 2 Tbl white wine vinegbar
- 2 Tbl minced shallots
- 2 Tbl tarragon, chopped
- 1-1/2 Tbl capers
Sweet Potatoes Aligot

Originating from the Midi-Pyrénées in the South of France, pommes aligot is a whipped potato-fondue hybrid
- 2 large (about 2 pounds) sweet potatoes, peeled and cut into 2-inch pieces
- Kosher salt, to taste
- 2 pounds Tomme d'Auvergne, rind removed and cheese cut into 1/2-inch cubes, divided (1 pound Gruyère and 1 pound fresh mozzarella can be substituted)
- 1/2 cup heavy cream, warmed
- 6 tablespoons (3/4 stick) unsalted butter, softened
- 2 garlic cloves, finely grated
- 1/2 teaspoon freshly grated nutmeg
- Freshly ground black pepper, to taste

- 1 medium yellow onion (grated)
