WALNUT & HERB-CRUSTED CHICKEN

Combine olive oil and lemon juice
- 1/4 cup extra virgin olive oil (50 mL)
- 2 tbsp fresh lemon juice (25 mL)
- 4 boneless, skinless chicken breasts, salt and pepper to taste
- 1/2 cup finely ground California walnuts (125 mL)
- 1/2 cup breadcrumbs (125 mL)
- 1 tbsp each, finely chopped fresh rosemary and fresh sage (15 mL)
- Garnishes: Grated orange rind and walnut pieces
ROASTED CAULIFLOWER WITH WHIPPED GOAT CHEESE

Roasted Cauliflower Preheat oven to 475
- Roasted Cauliflower
- 2 1/2 cups dry white wine
- 1/2 cup olive oil
- 1/4 cup kosher salt
- 3 tbsp fresh lemon juice
- 2 tbsp lemon juice
- 1 tbsp crushed red pepper flakes
- 1 tbsp sugar
- 1 bay leaf
- 1 head of cauliflower, leaves removed
- Whipped Goat Cheese
- 4 oz fresh goat cheese
- 3 oz cream cheese
- 3 oz feta
- 1/2 cup heavy cream
- 2 tbsp olive oil, plus more for serving
- Coarse seal salt (for serving)
CHEESE LOG

Combine all ingredients, except parsley and walnuts, in a food processor and shape into a log
- 1/2 cup pimento cream cheese
- 1/2 cup chopped onion
- 1/3 cup walnuts
- 1/2 cup sharp Cheddar cheese, grated
- 1 tbsp minced parsley
- 2 tbsp minced walnuts
- 1 1/2 tsp paprika
- 1 1/2 tsp curry powder
- 1 1/2 tsp dill

- 1 lemon, juiced
- 1 clove garlic, minced
- 1 tablespoon (15 mL) minced anchovy
- 1 tablespoon (15 mL) Worcestershire sauce
- 2 cups (500 mL) white wine vinegar
- 1/2 cup (125 mL) white wine vinegar
- Freshly ground black pepper
- 3 tablespoons (45 mL) fresh grated or shaved Parmesan (or more if you wish) optional or sprinkle on salad

- 1/2 cup dry white wine
- 1 tbsp Thai red curry paste
- 4 tbsp chopped fresh basil, divided
- 1/2 medium red onion, thinly sliced
- 1 carrot, peeled, julienned
- 1 celery stalk, thinly sliced on a diagonal
- Kosher salt, freshly ground pepper
- 2 lb mussels, scrubbed, de-bearded
- 2 tbsp chopped fresh flat-leaf parsley

CHOCOLATE-MACADAMIA SEMIFREDDO

- 2/3 cup salted macadamia nuts
- 4 ounces bittersweet chocolate, coarsely chopped
- 2/3 cup sugar
- 1 1/3 cups heavy cream
- 3 large egg whites
- 1/4 teaspoon pure vanilla extract
BANANAS FOSTER (Brennan's)

Combine the butter, sugar, and cinnamon in a flambe pan or skillet
- 1/4 cup (1/2 stick) butter
- 1/2 c brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup banana liqueur
- 4 bananas, cut in half lengthwise, then halved
- 2 tbsp golden rum
- 4 scoops vanilla ice cream
CAULIFLOWER GRATIN WITH GRUYERE

Make the sauce: Bring the milk to a simmer in a saucepan with the bay leaf and garlic
- 1 1/2 cups milk
- 1 bay leaf
- 1 clove garlic split
- 3 tbsp butter
- 1/2 cup grated Gruyere cheese
- Salt and pepper
- 1 lb. cauliflower florets
- 1/4 cup breadcrumbs
- 2 to 3 tablespoons grated Parmesan cheese
PIZZA BREAD

- 5 1/2 oz tomato paste
- 1 cup grated Mozzarella cheese
- 3 tbsp Parmesan cheese
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/4 tsp garlic powder
- 1 1/4 cup pepperoni
- 1 cup diced green pepper
- 1 cup sliced fresh mushrooms
- 1 cup grated Mozzarella cheese
- 1/2 cup grated Cheddar cheese
SPINACH DIP (Knorr's)

- 2 cups mayonnaise
- 1 package Knorr's vegetable soup mix
- 1 can (8 oz) water chestnuts, drained and chopped (optional)
