NOVEAU THREE-BEAN SALAD

Boil green and yellow beans until tender, about 7 minutes; drain and rinse
- 1 lb each of green and yellow beans
- 1 , 15 oz can small red beans, rinsed
- 1 sliced shallot
- 6 tbsp olive oil
- 3 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp chopped tarragon
- Salt and pepper, to taste

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda

CHOCOLATE MACADAMIA SHORTBREAD

In large bowl, with electric mixer, cream butter and sugar until light and fluffy
- 1 cup softened butter (250 mL)
- 2/3 cup icing sugar (150 mL)
- 1/2 tsp vanilla (2 mL)
- 1 3/4 cup all-purpose flour (425 mL)
- 1/4 cup cornstarch (50 mL)
- 2/3 cup Milk Chocolate Chips (150 mL)
- 1/2 cup coarsely chopped macadamia nuts or pecans (125 mL)
PASTA CARBONARA

Bring an 8-quart pot of water to a boil
- 1 lb dried linguini
- Kosher salt
- 1/2 lb pancetta, cut into 1/4" dice
- 2 tbsp extra-virgin olive oil
- 3 large eggs, at room temperature
- 4 oz finely grated Parmigiano-Reggiano (about 3 1/2 cups using a rasp grater)
- Freshly ground black pepper
GNOCCHI WITH VEGGIES & FETA

In a large skillet, heat 2 tbsp olive oil over medium-high heat
- 2 tbsp olive oil
- 2 small, sliced leeks, white part only
- 1 diced red pepper
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 cup vegetable broth
- 1 , 500 gm package potato gnocchi
- 1/2 cup feta cheese, crumbled
- 2 tbsp chopped fresh parsley

- 1 garlic clove, minced
- 1/2 lemon
- 1/2 tsp (2 mL) salt
- 1/4 tsp (1 mL) freshly ground black pepper
- 1/4 cup (50 mL) plus 1 tbsp (15 mL) olive oil
- 1 cup (250 mL) coarsely chopped fresh basil
- 6 colourful peppers
