Soak ribs in soya sauce for 12 hours
- 1 lb button ribs
- Soya sauce
- Flour
- Salt and pepper
GREEN BEANS WITH WARM BACON VINAIGRETTE

Cook beans in boiling water for 7 minutes or until crisp-tender
- 2 pounds green beans, trimmed
- 3 bacon slices, chopped
- 3/4 cup thinly sliced shallots (about 2 medium)
- 1 1/2 tablespoons toasted walnut oil
- 2 teaspoons champagne vinegar
- 1 teaspoon kosher salt
- 3 tablespoons chopped walnuts, toasted
- 1 tablespoon chopped fresh flat-leaf parsley
COCONUT COOKIES

Preheat oven to 350F. Combine the flour, baking soda and salt; set aside
- 1 1/4 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter

- 1/2 tsp vanilla

- 1/2 cup butter
- 1/4 cup sugar
- 2 cups buttermilk
- 2 eggs
- 1/2 cup chopped walnuts

- 1 tsp Salt
- 1/2 cup raisins
SWEET & SPICY CASHEW CHICKEN

Whisk together chicken broth, oyster sauce, sugar, cornstarch and vinegar; set aside
- 1/2 cup sodium-reduced chicken broth
- 3 tbsp oyster sauce
- 1 tbsp cornstarch
- 1 tbsp vinegar
- 2 tbsp peanut oil
- 1 lb boneless skinless chicken breasts, cut in chunks
- 2 sweet red peppers, chopped
- 2 onions, chopped
- 1 cup chopped celery
- 1 tsp Thai chili paste or sambal oelek
- 1/2 cup roasted unsalted cashews
- 3 green onions, chopped
ROCKY MOUNTAIN BRIE IN PHYLLO

Rehydrate cherries in water, simmering them on the stovetop or in the microwave until tender
- 1/2 cup (125 mL) dried sour cherries
- 1/4 to 1/2 cup (60 to 125 mL) water
- 1 cup (250 mL) plum preserves (Damson plum is best)
- 2 tbsp (30 mL) black currant jam
- 1 tbsp (15 mL) minced fresh thyme, optional
- 1 lemon, juice and zest
- 12 filo sheets
- 1/2 cup (125 mL) melted butter
- 1 to 2 lb. (1 kg) wheel of brie, whole
CARROTS WITH MAPLE & TOASTED ALMONDS

Sweet and sour flavours and crunchy textures accent this easy-to-make carrot side dish
- 4 medium carrots (about 1 1/2 pounds), peeled
- 1/2 cup sliced almonds, lightly toasted
- 2 tablespoons butter
- 2 tablespoons maple syrup
- 2 teaspoons fresh lemon juice
- 1/4 cup chicken or vegetable stock
- salt and freshly ground black pepper to taste
GEORGE WASHINGTON PIE

Grease 9" pie plate. Add sugar slowly to beaten egg whites
- 3 egg whites, beaten stiff
- 3/4 cup white sugar
- 12 rolled soda crackers
- 1 1/2 tsp baking powder
- 1 cup small marshmallows
- 1 tbsp Amaretto
- 1/2 cup chopped walnuts
