AZTEC SALSA

Place diced avocados in small bowl with red wine vinegar right away so avocado doesn't start to turn brown
- 1 small can sliced black olive
- 1 can black beans, drained and rinsed
- 1 small can corn, drained
- 4 Roma tomatoes, diced
- 1 packaged Italian salad dressing mix
- 2 avocados, peeled and diced
- 1 jalapeno, seeded and finely chopped
- 1 small red onion, chopped
- 1/2 red pepper, chopped
- 5 green olives, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- Juice of 1 lime
MINT CHOCOLATE CHIP ICE CREAM TORTE

Process cookies and butter
- 1 package Oreo mint cream chocolate cookies
- 2 tbsp butter, melted
- 1 quart mint chocolate chip ice cream, softened

LIME-MARINATED MAHI MAHI

Preheat outdoor grill for medium heat, and lightly oil the grate
- 3/4 cup extra virgin olive oil
- 1 clove garlic, minced
- 1/8 tsp ground black pepper
- 1/2 tsp cayenne pepper
- 1 pinch salt
- 2 tbsp lime juice
- 1/8 tsp grated lime zest
- 2 , 4 oz mahi mahi fillets
- 2 twists lime zest (optional)
BALSAMIC & PEPPER MARINATED STRAWBERRIES

Reduce the vinegar to half over low flame and set aside to cool to room temperature

- 8 oz cream cheese, room temperature
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 10 dashes Tabasco sauce
- 1 tsp kosher salt
- 2/3 rap freshly ground black pepper
- 2 green onions, thinly sliced (white and green parts)
- 1 tbsp fresh dill
- Note: Use 16 oz cream cheese only for a spread

RED WINE SUMMER SANGRIA

Put fruit in pitcher with sugar, cloves, cinnamon, brandy and 1 cup of wine
- 1 nectarine, unpeeled & sliced
- 1 orange, unpeeled & sliced
- 1 lemon, unpeeled & sliced
- 2 tbsp sugar
- 2 whole cloves
- 1 cinnamon stick, broken into 4 pieces
- 1 1/4 oz brandy
- 1 bottle dry red wine
- 15 ice cubes
- 1 1/2 cups soda water, chilled
LEMON CURD

Place sugar, lemon peel and juice in a heavy saucepan
- For lime curd:
- 1 cup sugar
- 1 tbsp finely grated lemon zest
- 1 cup fresh lemon juice (about 5 lemons)
- 3 tbsp cold butter, cut in bits
- 3 eggs, lightly beaten
- Substitute fresh lime juice and the zest of a large lime for the lemon juice.
