FROZEN MILK CHOCOLATE & AMARETTO MOUSSE PIE

Preheat oven to 350F. Butter 9" diameter glass pie dish
- 26 chocolate wafer cookies
- 1/4 cup unsalted butter, melted
- 9 oz milk chocolate, finely chopped
- 1/3 cup amaretto
- 1/4 cup light corn syrup
- 1 1/2 cups chilled whipping cream
- Additional whipped cream
- Raspberries
- Chocolate Shavings
SNOW PEAS WITH ROASTED PEPPERS & BALSAMIC VINEGAR

Bring a large pot of water to boil
- 1/2 lb (250 g) snow peas, trimmed
- 1 tbsp (15 mL) olive oil
- 1 large roasted red pepper, diced into 1/4-inch (6mm) squares (see note)
- 1 tbsp (15 mL) balsamic vinegar
- 1/2 tsp (2mL) granulated sugar
- Salt and freshly ground black pepper to taste

- Salad:
- 1-1/2 lb (680 g) new potatoes, (about 7)
- 1/2 cup (125 mL) sliced radishes
- 2 green onions, chopped
- 1 sweet yellow pepper, diced
- Dressing:
- 1/2 cup (125 mL) buttermilk
- 1/4 cup (60 mL) low-fat yogurt
- 2 tablespoons (30 mL) chopped fresh dill
- 1 tablespoon (15 mL) vinegar
- 1 tablespoon (15 mL) vegetable oil
- 1/2 teaspoon (2 mL) Dijon mustard
- 1/4 teaspoon (1 mL) salt
- 1/4 teaspoon (1 mL) pepper
LEMONY ORZO-VEGGIE CHICKEN SALAD

- 3/4 cup uncooked orzo
- 1/4 teaspoon grated lemon rind
- 3 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon minced garlic
- 1/4 teaspoon honey
- 1/8 teaspoon freshly ground black pepper
- 1 cup shredded skinless, boneless rotisserie chicken breast
- 1/2 cup diced English cucumber
- 1/2 cup prechopped red bell pepper
- 1/3 cup thinly sliced green onions
- 1 tablespoon chopped fresh dill
- 1/2 cup (2 ounces) crumbled goat cheese
FROZEN RASPBERRY CHEESECAKE

Combine cookie crumbs and butter; press onto the bottom of an uncreased 9" springform pan
- 1 1/2 cups Oreo cookie crumbs
- 1/4 cup butter, melted
- 1 package (8 oz) cream cheese, softened
- 3/4 cup icing sugar
- 1 package (10 oz) frozen raspberries, thawed
- 1/2 cup cranberry-raspberry juice
- 1 tsp lemon juice
- 2 cups heavy whipping cream, whipped
KILLER KOOLAIDE

Pour all the ingredients into a tall glass filled with ice and stir
- 1 oz vodka
- 1/2 oz Amaretto liqueur
- 1/2 melon liqueur
- 3 oz cranberry juice
- Splash of soda
- Lime wedge to garnish
ROBBIE'S RIBS

Mix marinade ingredients together and marinate overnight
- 6 racks of pork baby back ribs
- 1 cup Bullseye BBQ sauce
- 1/4 tsp Tabasco sauce
- 2/3 cup soy sauce
- 3 tbsp dry mustard
- 1/4 white onion, diced
- 2 tsp Worcestershire sauce
- 1 clove garlic, crushed
- 1/3 cup red wine
PIMENTO CHEESE DIP

- 1 medium red bell pepper, roasted, peeled and chopped
- 1 medium yellow bell pepper, roasted, peeled and chopped
- 1/2 cup cream cheese, softened
- 1/2 cup crumbled goat cheese
- 1/2 cup shredded white Cheddar cheese
- 1/2 cup shredded Manchego cheese
- 1/2 cup shredded aged Gouda cheese
- 1/2 tbsp Sriracha chili sauce
- 2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp celery salt
CHUNKY APPLE DROPS

- 1/4 tsp nutmeg

- 1 tbsp hot water
- 3/4 cup soft shortening
- 1 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 cup finely chopped apple
- 1 1/2 cups rolled oats
- 1/2 cup raisins
- Granulated sugar
