BASIC VINAIGRETTE

In a small bowl, whisk together vinegar, mustard, and sugar; season with salt and pepper

- 3 large white onions
- 3/4 cup sugar
- 1 cup white vinegar
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons dry mustard
- 1-1/2 teaspoons celery seeds
- 1 cup salad oil
SPINACH SALAD WITH CRISPY FETA & FRIZZLED PROSCIUOTTO

Cut prosciutto into 1/4-inch (5 mm) thick strips
- Salad:
- 3 oz thinly sliced prosciutto (about 5 slices) or ham 90 g
- 2 tbsp extra-virgin olive oil 25 mL
- 2 tbsp all-purpose flour 25 mL
- 1/4 tsp each salt and pepper 1 mL
- 1 egg 1
- 1/3 cup dry bread crumbs 75 mL
- 1 pkg (200 g) feta cheese 1
- 1 pkg (6 oz/170 g) baby spinach 1
- Vinaigrette:
- 1/3 cup extra-virgin olive oil 75 mL
- 2 tbsp red wine vinegar 25 mL
- 1 tbsp Dijon mustard 15 mL
- 1/4 tsp each salt and pepper 1 mL
OPRAH'S POMEGRANATE MARTINI

Shake ingredients in a shaker and put in chilled martini glasses
- 1 1/2 cups pomegranate juice
- 2 oz Citron Vodka or white tequila
- 1 oz Cointreau liquor
- Cup of ice
- Splash of sparkling water (optional)
- Squeeze of lemon (optional)
ROASTED CAULIFLOWER WTH LEMON BUTTER

Cut cauliflower into florets to make about 6 cups
- 1 head of cauliflower
- 1/4 tsp salt
- 1/4 cup butter, melted
- 4 tsp lemon juice
- 1 tsp grainy mustard,
- Grated peel from 1 lemon
- 2 tbsp chopped parsley
LOBSTER CANAPES

Slice cucumber into 1/2 inch slices
- 1 lb frozen canned lobster meat, thawed and drained
- 1/2 cup mayonnaise
- 1/2 to 1 tsp curry powder
- 1 to 2 green onions, finely chopped
- 1/4 cup finely diced yellow pepper
- Salt and pepper to taste
- 1 or 2 English cucumbers, depending on their size
VEAL TERRINE

Preheat oven to 350°F. Mix all ingredients together well
- 2 lbs veal, ground 3-4 times
- 6 strips bacon, chopped
- 2 tsp salt
- 1/4 cup chopped chives
- 2 eggs
- 1 cup heavy cream
- 1 tbsp each chopped fresh thyme, rosemary and sage
- 1/2 cup shelled, blanched pistachios
PEACH MUFFINS

Preheat oven: 350° F. In a large bowl, combine flour, baking soda and salt
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup packed brown sugar
- 3/4 cup butter, softened
- 1 egg
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon finely grated orange peel
- 1 15 oz. can peach slices, drained and cut into small cubes
- 1/2 cup shredded sweetened coconut
CEDAR-PLANKED SALMON WITH DILL BEURRE BLANC

Salmon: Soak the planks in cold water for at least 1 hour, or overnight
- Salmon:
- 4 cedar planks, untreated
- 4 (6 ounce) (170 g) salmon fillet
- Salt and freshly ground black pepper, to taste
- Dill Beurre Blanc:
- 2 tablespoons (30 mL) butter
- 3 shallots, finely chopped
- 1 1/2 cups (360 mL) dry white wine
- 1 tablespoon (15 mL) lime juice
- 3 tablespoons (45 mL) whipping cream
- 1/2 cup unsalted butter, cut into small cubes
- 2 tablespoons (30 mL) fresh dill, finely chopped
- Salt and freshly ground black pepper, to taste
CHUNKY MONKEY MUFFINS

Preheat oven to 350 degrees F (180 degrees C)
- 3 cups (750 mL) all-purpose flour
- 2 cups (500 mL) granulated sugar
- 2 tsp (10 mL) baking powder
- 1 tsp (5 mL) baking soda
- 1/2 tsp (2 mL) salt
- 2 eggs
- 3/4 cup (175 mL) milk
- 2 tsp (10 mL) vanilla
- 1 cup (250 mL) melted and cooled butter
- 2 cups (500 mL) mashed banana
- 1 cup (250 mL) bran
- 1 cup (250 mL) chopped walnuts or chopped pecans or combination of both
