LOBSTER THERMIDOR

Remove lobster tails from shells, leaving top side of shell intact
- Make 1 cup Bechamel Sauce (next 6 ingredients):
- 2 large lobster tails
- 1/4 cup butter, melted
- 1/2 clove garlic, minced
- 2 tbsp butter
- 1 lb fresh mushrooms, thinly sliced
- 2-3 shallots, finely chopped
- 4 tbsp butter
- 3 tbsp flour
- 1/2 cup lobster, fish or chicken stock
- 1 cup whole milk
- Salt and pepper to taste
- Pinch of nutmeg
- 2/3 cup white wine
- 3 tbsp sherry
- 1 cup lobster, fish or chicken stock
- 2 tbsp chopped tarragon
- 2 tbsp chopped parsley
- 3/4 cup whipping cream
- 2 egg yolks
- 1 tsp dry mustard
- Salt to taste
- 4 tbsp Parmesan cheese
- 2 tbsp brown panko breadcrumbs
- Sweet or hot paprika to garnish
CARROT & COCONUT CREAM SOUP WITH CUMIN & GINGER

Combine onion and butter in a large heavy pot
- 1 onion minced
- 1 tbsp butter
- 1 clove garlic, minced
- 1 tbsp fresh grated ginger
- 1/2 tsp anise seed, cracked
- 1/2 tsp orange zest, finely grated
- 1/4 tsp fennel seed, cracked
- 1/2 tsp sweet smoked paprika
- 6 large carrots, peeled and thinly sliced
- 4 cups chicken or vegetable stock
- 1 tbsp fish sauce
- 1 cup coconut milk
- Kosher salt to taste
- 2 tbsp fresh cilantro, minced
- 1/2 lime, juice only
GRILLED STRIP LOINS WITH OLIVE TAPENADE

- Olive Tapenade:
- 1/2 cup (125 ml) dry red wine
- 1/3 cup (75 ml) olive oil
- 2 tablespoons (25 ml) soy sauce
- 1 tablespoon (15 ml) Worcestershire sauce
- 2 teaspoons (10 ml) rosemary, crumbled
- 1/4 teaspoon (1 ml) salt
- 2 cloves garlic, finely chopped
- 4 strip loin steaks, 1-inch (2.5-cm) thick
- 2/3 cup (150 ml) Kalamata olives, pitted and chopped
- 1/4 cup (50 ml) finely chopped red onion
- 1 tablespoon (15 ml) olive oil
- 2 tablespoons (25 ml) chopped fresh parsley
- 1/2 teaspoon (2 ml) oregano, crumbled
- 1/4 teaspoon (1 ml) freshly ground pepper
BEET & SPINACH SALAD

Preheat the oven to 400F. Wrap the beets in foil packets and roast in the oven until tender, about 1 hour
- 3 medium beets, washed and trimmed
- 1/4 cup extra virgin olive oil
- 2 tbsp sherry vinegar
- 1 tbsp honey
- 1 tbsp mined red onion
- 1/2 tsp Dijon mustard
- 4 cups baby spinach
- 1/2 cup crumbled Chevre
- 1/2 cup chopped toasted walnuts
SUPER SALAD

- Dressing:
- 1 clove garlic, minced
- 2 tsp liquid honey
- 6 tbsp white wine vinegar
- 9 tbsp oil
- Salt and pepper
- 1/2 tsp paprika
- Salad:
- 1/2 head romaine, in pieces
- 1/2 bunch spinach
- 3 mushrooms, sliced
- 1/2 red pepper, cut into small pieces
- 1/4 cup pumpkin or sunflower seeds
- 10 cherry tomatoes, cut in half
- 1/2 Feta cheese, crumbled
- 6 slices bacon, cooked and crumbled
RHUBARB UPSIDE-DOWN CAKE (Mom)

Cut rhubarb into small pieces
- 2 cups rhubarb
- 3/4 cup brown sugar
- 1 egg, beaten
- 1/4 cup sugar
- 1 cup flour
- 1 tsp baking powder
- 1/2 cup milk
- 1/2 tsp vanilla
- 1/4 tsp salt
BUTTERFLIED LEG OF LAMB IN YOGURT MARINADE

Combine all the marinade ingredients
- Marinade:
- 1 leg of lamb, boned, trimmed and butterflied
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground anise
- 1 cup natural yogurt
GLAZED SALMON (SWEET & SPICY)

In a saucepan, combine sugar, soy sauce, mustard and rice vinegar
- 3 tbsp dark brown sugar
- 1 tbsp soy sauce
- 1 tbsp Dijon hot mustard
- 1 tsp rice vinegar
- 4 6 oz salmon fillet, about 1" thick
- Cooking spray
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
LAST MINUTE BISCUITS

Melt butter in saucepan. Stir in parsley and salt
- 1 package refrigerator biscuits
- 3 tbsp butter
- 1 tsp parsley
- 1/2 tsp dried dill
- 1/4 tsp seasoned salt
- 1/2 cup Cheddar cheese
