BERRY CREAM MUFFINS (Mom)

In large bowl, combine flour, sugar, baking powder, baking soda and salt
- 2 cups flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups raspberries
- 2 eggs, lightly beaten
- 1 cup sour cream
- 1/2 cup canola oil

GUACAMOLE SHRIMP APPETIZERS

FUSILI WITH GORGONZOLA WALNUT SAUCE

Cook pasta until just tender
- 12 oz fusilli
- 2 tbsp butter
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tsp chopped fresh thyme
- 3/4 cup heavy whipping cream
- 1/2 to 3/4 cup crumbled Gorgonzola
- 3/4 cup walnut pieces, toasted
- 1 cup chopped fresh basil
EASY-ROLL PASTRY

In bowl, whisk flour with salt
- 2 1/2 cups flour
- 3/4 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup cold lard or vegetable shortening, cubed
- 1/4 cup cold water (approx.)
- 3 tbsp sour cream
- 1 egg

- 1/2 tsp lemon extract
- 1/4 tsp almond extract

PORK CURRY LIME KABOBS

Cut pork into 1-1/2-inch (4 cm) cubes; place in bow
- 1 pork tenderloin (3/4 lb/375g)
- 1/2 tsp grated lime rind 2 mL
- 2 tbsp lime juice 25mL
- 2 tbsp chopped fresh coriander or parsley 25mL
- 1 tbsp packed brown sugar 15 mL
- 1 tbsp vegetable oil 15 mL
- 2 tsp curry powder 10 mL
- 1/4 tsp salt 1 mL
- Pinch pepper
- 1 large sweet yellow pepper
SEARED SCALLOPS WITH BEST COCONUT CURRY SAUCE

- 1 lb scallops
- 1 tbsp peanut or extra-virgin olive oil
- 1/3 cup thinly sliced white onion
- 1 medium carrot, peeled, cut in half lengthwise and thinly sliced into
- half-moons
- 1 tbsp minced fresh ginger
- 1 tsp Thai-style red curry paste
- 2/3 cup canned coconut milk
- 2 tbsp coarsely chopped fresh mint, basil or cilantro, or a mix
- 1 tbsp fresh lime juice
- Kosher salt
BLUBERRY SPINACH SALAD

- 1 pound fresh spinach or butter lettuce, torn into pieces
- 1 cup fresh blueberries
- 1 (4-ounce) package crumbled blue cheese
- 1/2 cup toasted pecans

- Dressing:
- 1/2 cup vegetable oil
- 3 tablespoons blueberry or white vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- Salt, to taste
