PEANUT CRUNCH SQUARES

Bring sugar and corn syrup to a boil, stir constantly
- 3/4 cup brown sugar
- 3/4 cup corn syrup
- 2/3 cup peanut butter
- 2 1/2 cups rice krispies
- 2 1/2 cups corn flakes
LEMON SQUARES

Preheat oven to 350F. To make crust, mix all crust ingredients in a food processor until combined
- Crust:
- 1 cup butter
- 2 cups flour
- 1/2 cup sugar
- Pinch of salt
- Lemon Curd:
- 4 eggs
- 1/3 cup lemon juice
- 2 cups sugar
- 1/4 cup flour
- 1 tsp baking powder
- Icing sugar, for garnish
FLAKY PASTRY (food processor)

In a food processor, mix the flour and salt
- 2 1/4 cups I bleached flour
- 1/4 tsp salt
- 3/4 cup unsalted butter, diced
- 6 tbsp ice water, approximately
SOUTHWESTERN WINGS WITH CILANTRO DIP

Remove tips from chicken wings; separate wings at joints
- 4 pounds (2 kg) chicken wings
- 1 1⁄4 cups (300 ml) all purpose flour
- 1 1⁄4 cups (300 ml) cornmeal
- 2 tablespoons (25 ml) ground cumin
- 2 teaspoons (10 ml) salt
- 2 teaspoons (10 ml) black pepper
- 1 teaspoon (5 ml) cayenne pepper
- 4 eggs
- 1/4 cup (80 ml) olive oil or vegetable oil
- Cilantro Dip
- 1 1/2 cups (375 ml) sour cream
- 1/2 cup (125 ml) mayonnaise
- 1 cup (250 ml) chopped fresh cilantro or parsley
- 1/2 cup (125 ml) chopped fresh chives or green onions
- 1 can (4 oz/125 g) chopped mild green chilies
- 2 jalapeno peppers, seeded and minced
- 1 teaspoon (5 ml) salt
CREAMY CAULIFLOWER SOUP

Cook cauliflower in boiling salted water
- 1 medium head cauliflower, cut in bite-sized pieces
- 1/4 cup butter or margarine
- 2/3 cup chopped onion
- 2 Tablespoons flour
- 2 cups chicken broth
- 2 cups Half and Half
- 1/2 teaspoon Worcestershire sauce
- Salt to taste
- 1 cup grated Cheddar cheese
- Chopped parsley
STRAWBERRY GLAZED BRIE

In small saucepan, combine strawberries, brown sugar, lemon juice and cinnamon; bring to a boil
- 3/4 cup strawberries, mashed
- 4 tsp brown sugar, packed
- 2 tsp lemon juice
- 1/8 tsp cinnamon
- 1 8 oz round Brie
MUSTARD SAUCE ROASTED FISH (Peggy)

Preheat oven to 425 degrees
- 4-8 oz fish fillets such as Red Snapper or Opa
- 8 ounces of creme fraiche
- 3 tbsp Dijon mustard
- 1 tbsp whole-grain mustard
- 2 tbsp minced shallots
- 2 t drained capers
LETTUCE CUPS WITH SPICY SHRIMP & GLASS NOODLES

This is an incredibly tasty salad and is a really fun and light way to start dinner party
- 1 large head iceberg or butter lettuce, leaves separated
- 1/2 cup rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 2 cloves garlic, crushed and chopped
- 1/2 fresh red chile, seeded and chopped finely
- 1 teaspoon sesame oil
- 1 lime, zest and juice of
- 2 tablespoons chili paste
- 1 teaspoon sesame oil
- 2 teaspoons chives or green onion, chopped finely
- 2 cups cooked shrimp meat
- 1/2 cup vegetable oil
- 1 large eggplant, diced into 3/4-inch cubes
- 1/2 teaspoon salt
- 1 (9-ounce) package glass noodles*
- 1 large mango, diced into 3/4-inch cubes
- 1 1/2 cups fresh basil, chopped
- 1 1/2 cups fresh cilantro, chopped
- 1/2 red onion, sliced thinly
- 1 1/2 cups peanuts, lightly roasted and chopped
