- 3-1/2 cups (875 mL) pineapple juice
- 1-1/2 cups (375 mL) packed brown sugar
- 1 piece (3 inches/8 cm) fresh ginger, peeled and sliced
- 6.5 kg fully cooked smoked bone-in ham
LEMON & THYME TURKEY BASTE

In small bowl, stir together all ingredients
- 1/4 cup butter, softened
- 1 tsp chopped fresh thyme
- 1/2 tsp grated lemon zest
- 1/2 tsp each salt and pepper
PARMESAN-ROASTED POTATOES

Place a rack in upper third of oven; preheat to 400F
- 3 lb baby Yukon Gold potatoes, halved
- 1/2 cup olive oil
- Kosher salt
- Freshly ground pepper
- 3/4 cup chopped flat-leaf parsley
- 1 tsp finely grated lemon zest
- 1 tbsp lemon juice
- 1 tsp crushed red pepper flakes
WINNING CHOCOLATE CHIP COOKIES

Line rimless baking sheets with parchment paper or grease: set aside
- 1 cup butter, melted
- 1 cup packed brown sugar
- 1 cup white sugar
- 1 package (102 grams) vanilla instant pudding mix
- 1 tbsp milk
- 2 eggs
- 2 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 cups milk chocolate chips
CARIBBEAN SHRIMP

Soak skewers in hot water for 30 minutes
- Bamboo skewers
- 1 lb frozen peeled raw shrimp, thawed and rinsed
- 3/4 cup pineapple juice
- 1/4 cup rum
- 2 tbsp fresh lime juice
- 2 tbsp oil
- 1 tbsp chopped fresh cilantro
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1 clove garlic, minced
FROZEN PINEAPPLE DELIGHT (Mom)

Beat egg yolks, salt and 1/2 cup sugar
- 3 egg yolks
- Dash of salt
- 1/2 cup plus 2 tbsp sugar
- 1 , 14 oz can crushed pineapple (drained, save juice)
- 2 tbsp lemon juice
- 3 stiffly beaten egg whites
- 1 cup whipping cream, whipped
- 1 1/2 to 2 cups vanilla wafer crumbs
YORKSHIRE PUDDING (With Extra Egg)

Measure flour and salt into bowl, make a well in center and pour in milk
- 7/8 cup flour
- 1/2 tsp salt
- 1/2 cup homogenized milk
- 2 eggs
- 1/2 cup water
- Small amount of cooking oil or beef drippings
- Note: all ingredients must be at room temperature.

SHRIMP MARINATED IN LEMON & OLIVE OIL

- 3 1/2 tsp lemon juice
- 2 tbsp olive oil
- 1 tomato, seeded and cut into 1/4”dice
- 1/4 tsp salt
