ANTIPASTO (Lou Haley)

Chop vegetables. Mix all together and bring to a boil
- 2 lbs cauliflower
- 2 lbs green pepper
- 2 lbs red pepper
- 2 lbs chopped onions
- 2 , 14 oz tins pitted black olives
- 4 , 10 oz tins sliced mushrooms
- 2 , 7 oz tins tuna
- 2 , 7 oz tins crab meat
- 1 , 3 oz tin anchovies
- 2 jars salad olives
- 100 oz ketchup
- 1 1/2 cups corn oil
- 1 1/2 cups white vinegar
- 1 tbsp salt
- 1 jar pickled onions
- 8 oz sweet mixed pickles
- 1/2 tsp hot red peppers
- 1 pkg frozen shrimp
- 1 jar dill pickles
- 2 , 14 oz tins green beans
LEMON OREGANO ROASTED VEGETABLES

Season all vegetables with salt, pepper and herbs
- 2 zucchini, cut into 1/2" slices
- 1 red onion, peeled and cut into wedges
- 1 large eggplant, cut in half lengthwise and then slice
- 2 red peppers, cut into wedges
- 2 green peppers, cut into wedges
- 200 g asparagus, trimmed and cut in half lengthwise
- 1/2 cup olive oil
- 2 tbsp fresh oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 lemon
AMAZING SLOPPY JOES

In a large skillet, preferable non-stick, heat 1 tbsp of the oil
- 1 tbsp, plus 1 tsp canola oil
- 2 medium chopped red onions
- 1 large red or yellow pepper
- 3 large cloves garlic
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1/2 tsp fresh thyme
- 1 1/2 lbs lean ground beef
- 1 1/2 cups canned tomato sauce
- 1 cup full bodied beer
- 1 tbsp Worcestershire sauce
- 1 sliced green onion
- 4 pieces French or Italian bread

Crust: In large bowl, whisk flour with salt
- Crust:
- 1 1/2 cups flour
- 1/4 tsp salt
- 1/4 cup cold butter, cubed
- 1/4 cup lard, cubed
- 1 egg yolk
- 1 tsp vinegar
- Ice water
- Filling:
- 1/2 cup packed brown sugar
- 1/2 cup corn syrup
- 1 egg
- 2 tbsp butter, softened
- 1 tsp vanilla
- 1 tsp vinegar
- 1 pinch salt
- 1/4 cup currants or raisins
- 1/4 cup chopped pecans (optional)
- 1/4 cup shredded coconut (optional)
CRISPY COOKIES

Mix sugars and butter together
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup butter
- 2 eggs
- 1 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups oatmeal
- 1 cup walnuts
- 1 cup raisins
BACON SAUSAGE ROLL-UPS

Cut bacon in halves. Cut sausage in halves
- 1 cup brown sugar
- 1 lb bacon
- 16 sausage links
THANKSGIVING POTATOES

Place the diced potatoes in a large saucepan and add water to cover
- 9 large baking potatoes, peeled and diced
- 1/2 cup (1 stick) unsalted butter, room temperature
- 12 ounces cream cheese, room temperature
- 3/4 cup sour cream
- 1 cup warm milk
- 1/2 teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste
PUFFED PANCAKE WITH STRAWBERRIES

In blender or large bowl, mix eggs, milk, liqueur or orange juice, sugar, flour and salt until blended
- STRAWBERRY SAUCE:
- 6 eggs
- 1 cup milk
- 1/4 cup orange-flavored liqueur or orange juice
- 1/2 cup sugar
- 1 cup flour
- 1/4 teaspoon salt
- 1/4 pound butter
- Strawberry Sauce, see below
- powdered sugar, if desired
- dairy sour cream, if desired
- 2 (10 ounce) packages frozen strawberries in syrup
- 2 tablespoons orange-flavored liqueur or orange juice
HALIBUT WITH LEMON TARRAGON VINAIGRETTE

In a small bowl or measuring cup, whisk lemon juice with salt and pepper
- Juice of one lemon (2 to 3 tbsp)
- 1 tsp Kosher salt
- Pinch freshly ground black pepper
- 1/4 cup extra virgin olive oil
- 1 tbsp chopped fresh tarragon
- 1 lb fresh halibut, in one piece of cut into serving pieces
GRILLED PINEAPPLE (WITH RUM-BUTTER)

Melt butter with brown sugar, dark rum, cinnamon and cloves
- 2 tbsp butter
- 1/2 cup brown sugar
- 2 tbsp dark rum
- 1/2 tsp cinnamon
- 1 $ tsp cloves
- 1 pineapple, cut into rings
