SPANISH RICE

Preheat oven to 350F. Brown hamburger in a frying pan, drain and set aside
- 1/2 lb hamburger
- 2 tbsp vegetable oil
- 1 medium onion, diced
- 2 sweet peppers, diced
- 2 tomatoes, diced
- 2 celery ribs, diced
- 2 garlic cloves, minced
- 2 tbsp paprika
- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- 1 tsp oregano
- 1 tsp cumin
- Salt and pepper to taste
- 1 1/2 cups parboiled rice
- 3 cups chicken stock
- 3 tbsp parsley, chopped
VANILLA CUSTARD

In bowl, whisk together egg yolks, 1/2 cup (125 mL) of the milk, the sugar and cornstarch
- 4 cups (1 L) milk
- 3/4 cup (175 mL) granulated sugar
- 1/2 cup (125 mL) cornstarch
- 1 tbsp (15 mL) vanilla
ORANGE ROLLS

Coat a large bowl with cooking spray; set aside
- Vegetable cooking spray
- 2 envelopes active dry yeast
- 1/4 cup warm water
- 1 cup lukewarm milk
- 2 large eggs
- 1/4 cup granulated sugar
- 1 1/2 tsp salt
- 1/4 cup plus 5 tbsp unsalted butter, softened
- 2 tbsp finely grated orange zest (from 2 oranges)
- 3 1/2 to 4 cups flour, plus more for work surface
- 2 cups plus 3 tbsp icing sugar
- 2 to 3 tbsp orange juice
CLASSIC PUMPKIN PIE WITH PECAN STREUSEL

- Pastry dough
- 15-oz can of canned solid-pack pumpkin (about 2 cups)
- 1 cup heavy cream
- 1/2 cup whole milk
- 2 large eggs
- 3/4 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- pinch of ground cloves
- 1/4 teaspoon salt
ALMOND BAKED SALMON WITH DOUBLE MUSTARD SAUCE

Salmon: Line a large rimmed baking sheet with parchment paper
- SALMON:
- 1/2 cup (125 mL) mayonnaise
- 1/4 cup (50 mL) Dijon mustard
- 1 tbsp (15 mL) packed golden brown sugar
- 1/2 tsp (2 mL) dill weed
- 1 cup (250 mL) soft fresh bread crumbs
- 1/4 cup (50 mL) chopped fresh parsley
- 1/4 cup (50 mL) coarsely chopped sliced almonds
- 2 tbsp (25 mL) butter, melted
- 1/4 tsp (1 mL) freshly ground pepper
- 3 1/2 lb (1.75 kg) salmon fillet
- Double Mustard Sauce:
- 1/2 cup (125 mL) dry white wine
- 1/4 cup (50 mL) finely chopped green onion
- 1 tbsp (15 mL) mustard seeds
- 1 cup (250 mL) whipping cream
- 2 tbsp (15 mL) Dijon mustard
- 1/2 tsp (2 mL) tarragon, crumbled
- 1/4 tsp (1 mL) salt
JAMBALAYA WITH CHORIZO

Preheat the BBQ grill to medium-high
- 8 oz large shrimp, peeled and deveined, tail on
- 4 oz boneless, skinless chicken breast, cut in 1" pieces
- 3 oz dry-cured chorizo sausage, sliced
- 2 small tomatoes, diced
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 green pepper, finely chopped
- 1 stalk celery, diced
- 1 1/2 tbsp Creole seasoning
- 1 cup instant brown rice
- 1/2 cup chicken broth
- Kosher or coarse salt
- Freshly ground pepper
ROASTED CAULIFLOWER SALAD

Preheat oven to 400F. Toss a medium cauliflower, cut into bite-sized pieces, with olive oil, salt and pepper
- 1 medium cauliflower
- 3 tbsp olive oil
- 1/3 tsp salt
- Freshly grated pepper
- 2 tbsp mayonnaise
- 1 tbsp white balsamic vinegar
- 1 tsp grainy mustard
- 1/2 tsp honey
- 2 tbsp chopped parsley
PERFECT PIZZA DOUGH
