Peach Cobbler- Easy

Slice up the stick of butter in bottom of a square glass baking dish
- 1 stick butter or margarine
- 1 cup flour
- 1 cup sugar
- 3/4 cup milk
- 1 teaspoon baking powder
- 2 cans (15 ounce) of Del Monte Yellow Cling sliced peaches (in heavy syrup)
Cookies- Chocolate Chip

Preheat oven to 350 degrees
- 2 1/8 cups all-purpose flour (about 10 1/2 ounces)
- 1/2 teaspoon table salt
- 1/2 teaspoon baking soda
- 12 tablespoons (1 1/2 sticks) butter, melted and cooled slightly
- 1 cup packed light brown sugar (7 ounces)
- 1/2 cup granulated sugar (3 1/2 ounces)
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla
- 2 cups (12 ounces) semisweet or milk chocolate chips

- 2 1/2 cups low-sodium chicken broth or water (if using water, add 1 teaspoon salt)

- 1 can (15 Oz.) Black Beans,Drained
- 1 can (14.5 Oz.) Diced Tomatoes
- 1 package (10 Oz.) Frozen Corn
- 1/2 cups Onion, Chopped
- 1/2 cups Red Pepper, Diced
- 1 can (10 Oz) Enchilada Sauce
- 1 can (10 3/4 Oz) Cream Of Chicken Soup
- 1-1/2 cup Milk
- 2 whole Chicken Breasts
- 1 cup Pepper Jack Cheese, Shredded
Pork Chops- San Francisco - Crock Pot

In a large 12-inch skillet, heat the oil over medium-high heat until it is simmering and hot
- 2 tablespoons extra-virgin olive oil
- 4 pork chops, about 1-inch thick
- Salt and pepper for seasoning
- 2 cloves garlic, finely minced
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup low-sodium chicken broth
- 2 tablespoons packed light brown sugar
- 1/4 teaspoon red pepper flakes
- 1 tablespoon cornstarch
- 1 tablespoon cold water

- 3 Tbl oil
- 1 C uncooked long-grained rice
- 1 tsp. garlic salt
- 1/2 tsp. cumin
- 1/4 C chopped onion
- 1/2 C tomato sauce
- 2 C chicken broth
Burritos- Spicy Black Bean

To make the bean filling, heat the oil in a skillet over medium-high heat
- For the bean filling:
- 2 tsp. canola or vegetable oil
- 2 cloves garlic, minced or pressed
- 1 tsp. chili powder
- 1 tsp. minced chipotle in adobo sauce
- 1 tsp. ground cumin
- 1/4 tsp. kosher salt
- Dash cayenne pepper
- 1/3 cup water, vegetable broth or chicken broth
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (15 oz.) can pinto beans, drained and rinsed
- 6 tbsp. fresh salsa
- For serving:
- 6 (9- or 10-inch) flour tortillas, warmed
- Shredded cheese
- Diced tomatoes
- Shredded romaine lettuce
- Chopped green onions
- Low-fat sour cream or Greek yogurt
Smoothie- Peanut Butter Banana

Combine all ingredients in blender and process until smooth
- 3 ripe bananas, the riper the better
- 1 cup plain yogurt,
- 1/2 C peanut butter
- 1/2 cup ice cubes
- (or use frozen bananas and omit the ice)
Meatloaf

Preheat oven 375 Mix all ingredients well and place in baking dish
- Topping:
- 1 lb. ground beef
- 1 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/2 C chopped onion
- 1/2 C chopped green bell pepper
- 1 egg, lightly beaten
- 8 oz canned diced tomatoes w/ juice
- 1/2 C quick-cooking oats
- 1/3 C ketchup
- 2 Tbl brown sugar
- 1 Tbl mustard
