Chocolate-Raspberry Truffle Bars

Preheat the oven to 350°
- 1 pound semisweet chocolate
- 2 sticks (8 oz.) plus 1 1/2 T unsalted butter
- 1 1/4 C sugar
- 5 large eggs
- 1 C flour
- 1 pint raspberries
Mushroom Oregano Rice

Preheat oven to 350 F. Melt butter in a large pot, add onions and cook until golden
- 1/2 pound unsalted butter
- 3 C finely diced onions
- 2 C long-grain rice

- 2 tins water, using empty consomme tins to measure

Falafel Burgers

Pre-heat the oven to 300ºF
- 2 cans chick peas (15 ounces each), drained and rinsed
- 1 small red onion, chopped
- 2 cloves garlic, grated or finely chopped
- A large handful of parsley, chopped
- 3-4 tablespoons flour
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 tablespoon chili powder
- 1 1/2 teaspoons turmeric
- Salt and freshly ground black pepper, to taste
- 1/4 cup vegetable oil
- 1/2 cup tahini paste
- 3 tablespoons water
- Juice and zest of 2 lemons
- 4 sandwich-size whole wheat pita pockets
- 1-1 1/2 cups romaine lettuce, shredded
- 1/2 English (seedless) cucumber, sliced
- 1/4-1/2 cup hot pepperoncini peppers, sliced (depending on how hot you like it)
- 2 vine-ripe tomatoes, sliced
Lemon Panna Cotta

In a saucepan, mash the sugar, lemon peel and 1/4 cup water with a wooden spoon for a minute or so
- 2/3 cup sugar
- Finely grated peel of 5 to 6 large lemons (1/3 cup)
