BLT Pasta Bake: Bacon, Leeks, and Tomatoes

Cook pasta until al dente
- 1 lb. elbow macaroni
- 1 T EVOO
- 8 slices bacon, coarsely chopped
- 2 large leeks, trimmed and sliced
- 3 T unsalted butter
- 3 T flour
- 1/2 t cayenne pepper
- 1 t paprika
- 3 C milk
- 1 C chicken stock
- 3 1/2 C grated gruyere cheese
- 1 T dijon
- 1 pink cherry tomatoes
- 3/4 C bread crumbs
Chocolate Fudge Pie

Heat oven to 375º F. Place the pie plate on a baking sheet
- 1 store-bought piecrust, fitted into a 9-inch pie plate
- 6 ounces semisweet chocolate, chopped, plus more shaved for topping
- 1/2 cup unsalted butter (1 stick)
- 3 large eggs
- 1/8 teaspoon kosher salt
- 1/2 cup plus 3 tablespoons granulated sugar
- 1 1/2 cups heavy cream
Potato Leek Soup

Melt butter in a large soup pot over medium heat
- 1 T butter
- 2 C thinly sliced leeks (whites and 1" of greens)
- 1 C chopped celery
- 4 C chicken or vegetable broth
- 3 C peeled, diced potatoes
- 1 C chopped carrots
- 3/4 t dried thyme
- 1/2 t salt
- 1/4 t pepper
- 1 C buttermilk
- 1 T minced, fresh dill
Salmon with Puff Pastry and Pesto

Preheat the oven to 400 degrees F
- 4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
- 4 (4 to 6-ounce) pieces salmon
- 1/4 cup sliced almonds
- 1/4 cup purchased pesto
- 2 tomatoes, sliced
Buffalo Potato Wedges with Warm Blue Cheese Dip

Preheat the oven to 450°
- 3 tablespoons hot pepper sauce, preferably Frank's RedHot
- 3 tablespoons butter, melted
- 1 tablespoon seasoned salt
- 2 1/2 pounds baking potatoes
- Cooking spray
- 1 cup blue cheese crumbles
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/2 teaspoon pepper
- 8 celery ribs, cut into 3-inch sticks
Artichoke Salad

Drain artichokes, cut into quarters
- 2 cans (14 oz. each) artichoke hearts
- 2 sweet green peppers
- 1 sweet red pepper
- 2 tomatoes
- 3 T olive oil
- 3 T red wine vinegar
- 1 t dijon
- 1 clove garlic, minced
- 1/4 t salt and pepper
- 1/4 C black olives
- lettuce leaves
- 3 hard-boiled eggs, cut into wedges
Fake 'n' Bake Chicken

Preheat oven to 400 F. Spray a medium casserole dish with cooking spray
- 4 large boneless, skinless chicken breasts
- 1/3 C hoisin sauce
- 1/3 C hickory barbecue sauce
- 1 T lemon juice
- 2 t grated ginger root
- 1/2 t chili powder
Chicken-Orzo Salad with Goat Cheese

1. Cook pasta according to package directions, omitting salt and fat; drain well
- 1 1/4 C uncooked orzo
- 3 cups chopped grilled chicken breast strip
- 1 1/2 C trimmed arugula
- 1 C grape tomatoes, halved
- 1/2 C chopped red bell pepper
- 1/4 C chopped red onion
- 2 T chopped fresh basil
- 1 t chopped fresh oregano
- 2 T red wine vinegar
- 1 T extravirgin olive oil
- 1/8 t salt
- 1/8 t black pepper
- 6 T (1 1/2 ounces) crumbled goat cheese
Cheddar Bay Biscuits

- 2 cups biscuit mix
- 1 ½ oz. cheddar cheese, shredded
- 2/3 cups water
- ½ tsp garlic powder
- 1/8 tsp salt
- 1/8 tsp onion powder
- 1/8 tsp dried parsley
- ¼ cup melted butter
Peanut Butter - Gingersnap Cookies

1. preheat oven to 350 degrees
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/4 tsp cloves
- 1/3 cup peanut butter
- 3 tbsp becel
- 220 g brown sugar, packed
- 1 egg
- 1 tbsp molasses
- 1 tsp vanilla
