Spray a large skillet with non-stick spray
- 1 C chopped red onions
- 2 cloves garlic, minced
- 1 1/2 C chopped zucchini
- 1 can (28 oz.) diced tomato, undrained
- 1 C tomato sauce
- 2 T tomato paste
- 2 T each chopped fresh oregano and basil (or 1 1/2 t. each dried)
- 1/2 t. black pepper
- 1/4 t. crushed red pepper flakes
- 4 C dry penne pasta
- 8 oz. uncooked jumbo shrimp, peeled
- 8 oz. uncooked bay scallops
- 1/4 C sliced black olives
- 1 C crumbled feta cheese
- Chopped fresh parsley (for garnish.)

1. Bring chicken broth to a simmer in a saucepan and keep warm on low heat
- 4 cups Chicken Broth
- 1 pound Aspargus, In 1.5 Inch Sections
- 1 Tablespoon Olive Oil
- 1 cup Chopped Onion
- 1 cup Arborio Rice
- 1/4 cups Dry Vermouth
- 1/2 pounds Peeled And Deveined Medium Shrimp
- 1/4 teaspoons Salt
- 1/8 teaspoons Black Pepper
- 1/2 teaspoons Fresh Lemon Juice
- 1/2 cups Grated Parmesan Cheese

Combine all ingredients together in a blender and blend until smooth
- 1/2 C low-fat mayonnaise
- 1/4 C chicken broth
- 2 T grated parmesan cheese
- 1 1/2 T lemon juice
- 1 T red wine vinegar
- 1 hard-boiled egg (OR 1 raw yolk)
- 2 cloves garlic, minced
- 1/2 t dijon
- 1/2 t worcestershire sauce
- fresh black pepper to taste
Broccoli Pasta Bake

Cook rotini according to package directions
- 3 C dry rotini pasta
- 2 t butter or margarine
- 1 1/2 C chopped mushrooms
- 1 C diced carrots
- 1/2 C minced onions
- 1 can cream of celery soup, undiluted
- 1 C shredded sharp cheddar
- 3/4 C milk
- 1/4 C grated parmesan cheese
- 3/4 t dried basil
- 1/2 t dried oregano
- 1/4 t black pepper
- 2 C broccoli florets
- 1/4 C minced red bell pepper
Calamari and Fettuccine with Spicy Sauce

Pat calamari dry. Heat a large skillet over medium-high heat
- 1 lb. calamari, cut into thin rings
- 2 T EVOO
- 4 garlic cloves, chopped
- 1 t crushed chilis
- 1/2 C white wine
- 1 14-oz. can crushed tomatoes
- 1 t curry powder
- Pinch ground cinnamon
- Handful fresh chopped parsley
- 3/4 lb. fettuccine, cooked al dente
- 10 fresh basil leaves, shredded
Strawberry Daiquiri Pie

To make crust, combine graham crackers, sugar, and butter in a small bowl
- 1 C crushed graham crackers
- 2 T sugar
- 2 T butter or margarine, melted
- 1 can (14 oz.) sweetened condensed milk
- 1/2 C frozen strawberry daiquiri mix concentrate, thawed
- 1 C frozen strawberries in light syrup, thawed
- 2 C frozen whipped topping, thawed
Cabbage Roll Casserole

- 2 lbs. ground beef
- 1 C chopped onion
- 29 oz. can tomato sauce
- 3 1/2 lbs chopped cabbage
- 1 C uncooked white rice
- 1 t salt
- 1 tetra-pak beef broth
Cajun Cod

Preheat oven to 450 F. Spray a baking sheet with cooking spray and set aside
- 6 large cod filets (or other white fish)
- 2/3 C buttermilk
- Grated zest of 1 lemon
- 3 C Special K cereal, ground into crumbs
- 1/4 C freshly grated parmesan
- 1 T chopped fresh parsley
- 1 1/2 t cajun seasoning
