Spanikopita Burgers

Heat a large nonstick skillet over medium-low heat
- 1 tablespoon extra virgin olive oil (EVOO), plus some for drizzling
- 1 tablespoon unsalted butter
- 1 small red onion, 1/2 chopped and 1/2 thinly sliced
- 3 medium cloves garlic, 2 chopped and 1 crushed
- One box frozen spinach (10 ounces), thawed
- 2 teaspoons dried oregano, lightly crushed in your palm (1/3 palmful)
- 1 1/3 pounds ground chicken breast or ground turkey breast
- 1/4 pound crumbled feta cheese
- 1 tablespoon grill seasoning, such as McCormick brand Montreal Steak Seasoning by (a palmful)
- 1/4 English (seedless) cucumber, thinly sliced, plus one 2-inch length of cucumber, peeled, trimmed and coarsely chopped
- 1 plum tomato, thinly sliced
- 1 cup coarsely chopped arugula
- Hot pepper rings or pepperoncini (optional)
- Juice of 1 lemon
- Salt and freshly ground pepper
- 4 crusty rolls, split
- 1 cup plain yogurt, preferably Greek-style
- 2 whole roasted red peppers, drained
- 1/4 cup flat leaf parsley (a generous handful)
- 10-12 pitted kalamata olives (a generous handful)
- Chips of your choice, for serving
Spinach Garlic Bread

Just to warn you... you're looking at about 500 calories per serving
- 4 cups spinach leaves, stemmed
- 4 cloves garlic, cracked from skin
- 1 stick softened butter
- Salt and freshly ground black pepper
- 1 cup grated Parmigiano Reggiano cheese
- 1 loaf good quality Italian bread
Almond Toffee Bars

Preheat oven to 400 F. Line cookie sheet with graham crackers, cutting and fitting so there are no gaps
- 30 graham crackers
- 1 1/2 C sliced almonds
- 1 C butter

Baked Potato Soup

1. In a large saucepan, combine the potatoes, 2 cups milk and 1 teaspoon salt
- 2 large baking potatoes—peeled, halved lengthwise and thinly sliced crosswise
- 3 cups milk
- Salt and pepper
- 1/2 head cauliflower, cored and chopped
- 1 bunch green onions, white and green portions thinly sliced separately
- 4 slices bacon
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
Orange Ginger Pork and Vegetables

In a large skillet, heat 1T of the oil over medium-high heat
- 2 T vegetable oil
- 1 medium onion, sliced
- 2 medium carrots, sliced
- 1 each medium green and red bell pepper, cut into thin strips
- 1 C sliced celery
- 1 lb. well-trimmed boneless pork loin, cut into thin strips
- 1 clove garlic, minced
- 2 t grated ginger root
- 1/4 t red pepper flakes
- 2 C shredded bok choi
- 1/2 C orange juice
- Salt
Salmon Burgers

Pre-heat the outdoor grill, if using, to medium-high and prepare the grill with cooking spray
- 4 skinless salmon fillets (6 ounces each), cut into large chunks
- 1 tablespoon grill seasoning, such as McCormick brand Montreal Seasoning
- 1 tablespoon poppy seeds
- 1 tablespoon sesame seeds
- 3 tablespoons chopped fresh dill
- Extra virgin olive oil (EVOO), for drizzling
- 1/2 cup softened cream cheese
- 3 green onions, whites and greens, chopped
- 1/2 cup sour cream
- 1 teaspoon lemon juice
- Green leaf lettuce, for topping
- Sliced beefsteak or vine-ripened tomato, for topping
- Sliced red onion, for topping
- Crusty kaiser rolls, split and toasted

- 1/3 cup hickory-flavoured bbq sauce
- 2 tbsp tomato paste
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp grated gingerroot
- 2 tsp Worcestershire sauce
- 1 tsp minced garlice
- 1/2 tsp each ground cumin and chili powder
- 1 sirloin tip roast (3 to 3.5 lbs)

- 1 lb. ground beef
- 2-3 stalks celery, chopped
- 1 small onion, chopped
- 8 oz. can tomato sauce
- 1/4 C ketchup
- 1/4 C barbecue sauce
- 1 T firmly packed brown sugar
- 1 T worcestershire sauce
- 1 T vinegar
- 1 t dry mustard
- salt and pepper
Chicken Lasagne

In a medium bowl, combine ricotta, cottage cheese, spinach, egg white, and oregano
- 1 C ricotta cheese
- 3/4 C cottage cheese
- 1/2 package frozen chopped spinach, thawed and drained
- 1 egg white
- 1/2 t. dried oregano
- 12 lasagne noodles, uncooked
- 1 small roasted chicken (store-bought)
- 4 C chunky vegetable pasta sauce
- 1 C crumbled feta
- 1 1/2 C shredded mozzarella cheese
- 1/4 C chopped black olives
- 1/4 C chopped fresh parsley
