Chocolate-Mint Brownies

Preheat oven to 350 F. Spray an 8" square baking pan with non-stick spray and set aside
- 1/2 C flour
- 1 package instant chocolate fudge pudding mix
- 1/2 t baking powder
- 1/4 t salt
- 2/3 C sugar
- 3 T butter or margarine, softened
- 1 egg
- 1 egg white
- 1/4 C baby food prunes
- 1 t vanilla
- 1/3 C mint chocolate chips
Gnocchi with Fresh Chicken Sausage and Broccoli Rabe

Bring large pot of water to a boil and cook gnocchi
- Salt
- 1 package (12 to 16 oz.) fresh or frozen gnocchi
- 2 bunches broccoli rabe, trimmed and chopped
- 4 T olive oil
- 1 1/2 lbs. chicken sausage, casings removed
- 1 small onion, finely chopped
- 3 large garlic cloves, finely chopped
- 1/4 t. crushed red pepper flakes
- Zest and juice of 1 lemon
- Crusty bread
Horseradish Mac 'n' Cheddar with Bacon

Bring a large pot of water to a boil, salt it, add the pasta and cook until just shy of al dente
- Salt and pepper
- 1 pound farfalle pasta
- 8 slices smoked bacon
- 3 tablespoons butter
- 2 tablespoons flour
- 2 1/2 cups milk
- Ground nutmeg, to taste
- 2 1/2 cups grated extra-sharp white cheddar cheese
- 2 tablespoons prepared horseradish
- 1/3 cup finely chopped flat-leaf parsley (a generous handful)
- 2 scallions, finely chopped
- Pickle spears, for serving

- 2 packages yeast
- 1/2 C warm water
- 1 t. sugar
- 2 C milk, scalded
- 4 C warm water
- 1/4 C butter, melted
- 8 C flour
- 3 eggs, beaten
- 2 T salt
- 1 T sugar
- 6 1/2 C flour
- Beet leaves

Combine butter, corn syrup, sugars and cocoa powder in a heavy saucepan
- 1/2 cup butter or margarine
- 1 cup corn syrup
- 1 cup white sugar
- 1/4 cup brown sugar
- 6 heaping Tbsp. cocoa powder
- 1 tsp. vanilla
- 10 cups puffed wheat
Sunny-Side Sausage Fried Rice

In a large skillet, heat 2 tablespoons olive oil over medium heat
- 1/4 cup extra-virgin olive oil
- 2 cloves garlic, finely chopped
- 1 cup white rice
- 2 1/4 cups chicken broth
- One 14.5-ounce can diced tomatoes
- 5 ounces cooked chorizo, chopped
- 1/2 cup frozen peas
- 4 large eggs
- Chopped parsley, for sprinkling
Crab-stuffed Mushroom Caps

Wash mushrooms and pat dry with paper towels
- 16 large white mushrooms with stems
- 1 t olive oil
- 2 T minced onions
- 1 can crabmeat, drained
- 2 T each dry breadcrumbs, mayonnaise, and chopped, fresh parsley

- 1 pkg. (8 oz.) Philadelphia Cream Cheese, softened
- 1 ⁄2 cup plus 1 Tbsp. creamy peanut butter, divided
- 1 cup cold milk
- 1 pkg. (3.4 oz.) Jell-O Vanilla Flavor Instant Pudding
- 2 1⁄2 cups thawed Cool Whip Whipped Topping, divided
- 1 Oreo Pie Crust (6 oz.)
- 3 squares Baker's Semi-Sweet Chocolate
Frozen Mojito Caketails

- 2 sticks (8 ounces) butter
- 3 cups salted pretzels, finely crushed
- 1 cup plus 6 tablespoons sugar
- Two 8-ounce packages cream cheese, softened
- Grated peel of 3 limes, plus 1/2 cup lime juice
- 2 tablespoons white rum
- 3 tablespoons finely chopped fresh mint, plus sprigs for garnish
- 2 cups heavy cream

- 1 C packed brown sugar
- 1 C margarine, softened
- 2 tsp. vanilla
- 2 eggs
- 60 Rolo candies (may substitute peanut butter cups, mint cups, etc.)
