Slow Chicken & Lentil Stew

Toss chicken pieces into your slow cooker
- 1 roasting chicken, cut into pieces (or a large package of chicken parts)
- 2 carrots, chopped
- 2 onions, chopped
- 2 stalks celery, chopped
- 1 sweet potato, peeled and chopped, or 2 baking potatoes
- 4 cloves garlic, minced
- 1 handful freshly chopped mushrooms
- 1 C lentils (green, black beluga, or French Du Puy)
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1-2 bay leaves
- 5 C water
- 1 C frozen peas
- 1 C frozen corn
- 1 tsp. chopped rosemary or thyme
Cauliflower Fritters

Steam the cauliflower until tender, 10 to 15 minutes
- 1 large head cauliflower (about 2 1/4 pounds), trimmed and chopped
- 1/2 cup flour
- 1 large egg, beaten
- One 10-ounce bag salad greens
- 2 tablespoons fresh lemon juice
Wheat and Cheddar Biscuits

Preheat oven to 425. In a medium bowl, combine both flours, baking powder, baking soda, salt, and cayenne pepper
- 1 1/4 C all-purpose flour
- 3/4 C whole wheat flour
- 2 t baking powder
- 1 t baking soda
- 1/4 t salt
- 1/8 t cayenne pepper
- 1/2 C shredded sharp cheddar cheese
- 3 T butter
- 1 C buttermilk
- 1 t honey
Guinness Chocolate Cake

Preheat oven to 350° and grease and line with parchment paper a 9-inch springform pan
- Cake:
- 1 cup Guinness
- 1/2 cup plus 2 tablespoons butter
- 1/2 cup cocoa
- 2 cups superfine sugar (berry sugar, dissolving sugar)
- 3/4 cup sour cream
- 2 eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking soda
- Frosting:
- 8 ounces cream cheese
- 1 1/4 cups icing sugar
- 1/2 cup heavy cream
Crock Pot Baked Potato Soup

A perfect dish for a cold day, this crock pot Baked Potato Soup will warm you up
- GARNISH:
- 2 1/2 pounds russet potatoes, washed but not peeled
- 1 small yellow onion, diced
- 5 cloves garlic, whole, crushed, or minced
- 4 cups chicken stock
- 8 ounces cream cheese
- 1/2 tablespoon seasoned salt
- Crumbled cooked bacon
- Shredded cheddar cheese
- Green onions

- 1 cup warm milk (110 degrees F/45 degrees C)
- 2 eggs, room temperature
- 1/3 cup margarine, melted
- 4 1/2 cups bread flour
- 1 teaspoon salt
- 1/2 cup white sugar
- 2 1/2 teaspoons bread machine yeast
- 1 cup brown sugar, packed
- 2 1/2 tablespoons ground cinnamon
- 1/3 cup butter, softened
- 1 (3 ounce) package cream cheese, softened
- 1/4 cup butter, softened
- 1 1/2 cups confectioners' sugar
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Peanut Butter Cup Cookies

Heat oven to 375° F. Line 2 baking sheets with parchment paper
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 3/4 cup dark brown sugar
- 1/2 cup granulated sugar

Shrimp and Mussels with Couscous

In a large saucepan or dutch oven, heat oil over medium-high heat
- 1 T olive oil
- 1 C sliced leeks
- 1/2 C diced carrots
- 1 can (19 oz.) stewed tomatoes
- 1 t minced garlic
- 1 C green bell pepper strips
- 1 lb. fresh mussels, cleaned and debearded
- 1 1/2 C quick-cooking couscous
- 12 large cooked shrimp
