Herb and Parmesan-Crusted Pork Tenderloin

Preheat oven to 375 F. Line a baking sheet with parchment paper
- 2 pork tenderloins
- 1/2 C dry bread crumbs
- 1/2 C chopped fresh parsley
- 1/3 C freshly grated parmesan cheese
- 1/2 t dried thyme
- 1/2 t salt
- 1/4 t freshly ground black pepper
- 1/4 C dijon mustard
- 3/4 t fennel seeds, crushed
- 1 clove garlic, minced
Catfish Po'Boy

In a medium bowl, stir together the buttermilk and hot sauce; add the catfish and let marinate for 10 minutes
- 1 cup buttermilk
- 1 tablespoon hot pepper sauce, preferably Frank's RedHot, plus more for serving
- Four 6-ounce catfish fillets
- 1/2 head iceberg lettuce, shredded
- 1/2 cup store-bought tartar sauce
- 3 cups vegetable oil
- 1 cup flour
- 2 tablespoons seafood seasoning, preferably Old Bay
- 4 sandwich rolls, split and toasted
- 2 tomatoes, thinly sliced

- In a bowl, whisk together:
- 1 C flour
- 1 T plus 1 t baking powder
- 1/4 t sugar
- 1/4 t salt
- Beat in:
- 1 C milk
- 3 beaten eggs
- 5 T melted butter
- 1 T vegetable oil.
- Beat until smooth.
Bacon Onion Cheddar Biscuits

- 2 cups All-purpose Flour
- 1 teaspoon Baking Powder
- 3/4 teaspoons Salt
- 1/4 cups Vegetable Shortening (crisco, etc)
- 10 Tablespoons Milk (whole milk is best)
- 4 Tablespoons Vegetable Oil
- 1 whole Egg
- 10 slices Thick Cut Bacon, Fried And Crumbled
- 1 cup Finely Diced Onion
- 1 cup Grated Sharp Cheddar Cheese

- 1 cup Boiling Water
- ½ cups Buttermilk
- 2 whole Beaten Eggs
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla

- 1 -¾ stick Butter
- 4 Tablespoons (heaping) Cocoa

- For Chocolate/Peanut Butter:
- ½ cups Finely Chopped Pecans
- 6 ounces, weight Milk Chocolate Bark

- 1-1/2 pound Ground Beef
- 1 pound Hot Breakfast Sausage
- 2 cloves Garlic, Minced
- 2 cans (14.5 Ounce) Whole Tomatoes
- 2 cans (6 Ounce) Tomato Paste
- 2 Tablespoons Dried Parsley
- 2 Tablespoons Dried Basil

- 3 cups Lowfat Cottage Cheese
- 2 whole Beaten Eggs
- 1/2 cups Grated (not Shredded) Parmesan Cheese
- 2 Tablespoons Dried Parsley

- 1 pound Sliced Mozzarella Cheese
- 1 package (10 Ounce) Lasagna Noodles

A really easy and kid-friendly recipe
- 2 packages Ichiban soup mix (pork or chicken)
- boiling water
- 1 lb. pork tenderloin
- 250 g. snow peas, trimmed
- 2 green onions
- 1 small sweet red pepper
- 1 T oil
- 1 T cornstarch
- 2 T light soy sauce
- 2 tsp. sugar
- 1/2 tsp. ground ginger
- pinch crushed red pepper
- 1 clove garlic, crushed
Greek Dip

Lemon-dill white bean hummus topped with chopped veggies and feta cheese
- White Bean Hummus:
- 1 can white kidney beans (cannellini), drained and rinsed
- 1/4 C light sour cream
- 2 T freshly squeezed lemon juice
- 2 T tahini
- 1 T minced fresh dill
- 1 t minced garlic
- 1 t liquid honey
- 1 t grated lemon zest
- 1/4 t salt
- Pinch black pepper
- Toppings:
- 1/2 C diced tomatoes
- 1/2 C diced cucumber
- 1/3 C sliced green onions
- 1/4 C feta cheese
- 2 T sliced black olives
