Quiche

This is a great basic quiche recipe; modify it and add whatever you would like
- 1 ready-made pastry shell, partially baked
- 1 T dijon mustard
- 1 t dried dill
- 1 1/2 C vegetable or meat filling (broccoli, asparagus, ham, shrimp, tomato, pepper, etc. Steam vegetables first if using hard veggies.)
- 1/2 C grated cheese of your choice
- 3 eggs
- 2/3 C milk
Glazed Lemon Cookies

With an electric mixer, beat the butter and granulated sugar until fluffy
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 2 large egg yolks
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 2 cups all-purpose flour
- 1 cup confectioners' sugar
- 2 tablespoons fresh lemon juice, plus more if necessary
- 1 teaspoon grated lemon zest
Hamburger Soup

Mix everything in a large soup pot, stirring to break up the beef
- 6 C water
- 1 lb ground beef (uncooked)
- 3/4 C medium barley
- 2 large carrots, diced
- 2 large stalks of celery, chopped (with leaves)
- 1 medium onion, chopped
- 1 T dried parsley
- 2 t salt
- 1/2 t pepper
- 1 small can diced tomatoes
Chicken and Wild Rice Skillet

Cut chicken breasts into large chunks (about 6 pieces per breast
- 3 large boneless, skinless chicken breasts
- 2 t olive oil
- 3 C sliced mushrooms
- 3/4 C chopped onions
- 1 t minced garlic
- 1 package (180 g) Uncle Ben's Long Grain and Wild Rice original recipe
- 1 1/4 C chicken broth
- 1/2 dry white wine
- 1/2 C grated parmesan cheese
Roasted Red Pepper and Goat Cheese Tartlets

Preheat oven to 375 F. Place tart shells on a baking sheet
- 18 frozen unsweetened mini tart shells
- 1/2 C roasted red bell peppers, drained and chopped
- 4 oz. soft, unripened goat cheese, chopped
- 3 eggs
- 1 C whipping (35%) cream
- 1/4 t salt
- 1/4 t black pepper
Curried Shrimp with Rice

Heat the oil in a large skillet over medium heat
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, chopped
- 2 teaspoons curry powder
- 1 cup long-grain white rice
- Kosher salt and black pepper
- 1 1/2 pounds peeled and deveined large shrimp
- 1/2 cup fresh basil
Gingerbread

Classic gingerbread recipe
- 5 to 5 1/2 C AP flour
- 1 C sugar
- 2 eggs, beaten
- 1 C shortening (after melting)
- 1 1/4 C molasses
- 1 t salt
- 2 t cinnamon
- 1 t cloves
- 2 t ginger
- 1 t nutmeg
- 1 t baking soda
Smoked Salmon Puffs

Cut puff pastry into 36 squares; place on a baking sheet
- 1 puff pastry sheet, thawed
- Smoked salmon
- Sour cream
- Chives
Mushroom Onion Tartlets

Place cream cheese and 2 tablespoons butter in mixing bowl
- 4 oz. light cream cheese
- 3 T butter or margarine, divided
- 3/4 C plus 1 tsp. all-purpose flour
- 8 oz. fresh mushrooms, coarsely chopped
- 1/2 C chopped green onion
- 1 egg
- 1/4 tsp. dried thyme
- 1/2 C shredded swiss cheese
Golden Coconut Curry Prawns

Heat oil in a large, non-stick saucepan over medium heat
- 1 t. canola oil
- 1/2 C each minced onions and minced red bell pepper
- 1 clove garlic, minced
- 1 t. ground cumin
- 3/4 t. ground coriander
- 1/2 t. curry powder
- 1 C light coconut milk
- 1 t. sugar
- 1/4 t. crushed red pepper flakes
- 1 pound uncooked jumbo shrimp, peeled
- 1 T cornstarch
- 2 T chopped, fresh cilantro
- 4 C hot, cooked brown rice
