Lemon Butter Sauce for Fish

For white fish fillets
- 1/4 cup butter
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 teaspoon instant chicken bouillon granules or 1 teaspoon beef bouillon granules
- 1 teaspoon parsley flakes
- 1/4 teaspoon basil
- 1/4 teaspoon paprika
- 1/4 cup dry white wine
- 2 tilapia fillets (or other white fish)
Big Joe’s Big Chicken Cacciatore

Salt and pepper the chicken and then dredge in flour
- 8 chicken drum sticks
- 8 chicken thighs
- 1/4 cup of olive oil
- 1/2 cup of flour for dredging
- 1 medium onion, coarsely chopped
- 1 1/2 stalks of coarsely chopped celery
- 1 green or red bell pepper, coarsely chopped
- 3/4 cup of carrots diced
- 10-12 button mushrooms (white), cut into 1/4 pieces
- salt and freshly ground pepper
- 3 cloves of finely chopped garlic
- 2 1/2 tablespoons of drained capers
- 2 1/2 teaspoons of oregano
- 1 tablespoon of tomato paste
- 1 1/2 cup of dry red wine (Chianti, merlot, cabernet)
- 1 can of diced tomatoes (28oz.), include juice
- 1/4 – cup of chopped flat Italian parsley

- 2 large eggplants
- olive oil, for drizzling
- 1 head garlic, top sliced off
- 1 c. marinara sauce
- kosher salt
- Freshly ground black pepper
- 1/2 c. shredded Parmesan, divided
- 1 c. shredded mozzarella
- 1/4 c. packed, fresh basil leaves, plus more for garnish
- 4 slices low-moisture mozzarella
- 1/4 c. panko breadcrumbs

- 1 pound cauliflower
- 3/4 pound red potatoes
- 1 large apple, crisp
- 8 small radishes
- 1 cup red onion, 1/4-inch dice
- 8 ounces Italian Asiago cheese, rind removed, cut in 1/4-inch cubes
- 1/2 cup walnuts, toasted and coarsely chopped
- 1 teaspoon kosher salt
- 1/4 cup extra-virgin olive oil
- 3 tablespoons cider vinegar

- 1 cup unsalted butter, at cool room temperature
- 1 box (3.4 ounces) instant pistachio pudding mix, Jell-O preferred for best color
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/8 to 1/4 teaspoon pistachio flavor,* optional
- 2 cups King Arthur Unbleached All-Purpose Flour
- 2/3 cup shelled, finely chopped pistachio nuts, optional
- Use this flavor sparingly; it's strong, and a little goes a long way.
