- 8 oz. uncooked ribbon noodles (230g)
- 1 tablespoon olive oil (15ml)
- 1 yellow onion, chopped (140g)
- 3 tablespoons whole wheat flour, divided (20g)
- 2 cups beefless beef broth or veggie broth (0.5 liters) 1 tablespoon soy sauce (15ml)
- 1 teaspoon lemon juice (5ml) 1 teaspoon tomato paste (6g)
- 1 1/2 pounds mushrooms (half portobello and half button mushrooms), cut into large 2-inch chunks (740g)
- 1/2 teaspoon dried thyme 1/2 teaspoon dried sage 1/2 teaspoon salt (3g)
- 1 tablespoon white wine vinegar (15ml) 1/4 cup vegan sour cream – optional (55g) 10 turns of fresh ground, black pepper 1/4 cup flat-leaf parsley, minced (6g)

- 3 pounds Yukon Gold potatoes, peeled and very thinly sliced
- 3 cloves garlic, minced
- 3/4 teaspoon salt
- 1 cup heavy cream, divided
- freshly ground black pepper to taste
- freshly grated nutmeg to taste
- 2 cups freshly shredded Gruyere cheese, divided
Fish Wrapped in Crispy Potatoes

1. Heat the oil in a pan over medium heat
- For Dill and Caper Sauce:
- 1 tablespoon olive oil
- 2 large russet potatoes, peeled and sliced lengthwise, very thinly
- 1/4 cup dill and caper sauce - see below
- 2 (6 ounce) sole or cod fillets, rinsed and pat dry
- 1 tablespoon olive oil
- 1/2 cup dill
- 1/2 cup parsley
- 2 cloves garlic
- 3 tablespoons capers, drained
- 1/2 lemon, juice and zest
- 2 tablespoons olive oil
- pepper to taste
- Blend all dill and caper sauce ingredients in a food processor.
French Fries

Transfer potatoes to a large deep heavy pot, spreading potatoes so they're no more than 2 layers deep
- Peel 2 lb. large russet potatoes; cut into long french-fry sticks, about 3/8x3/8 inches thick. Rinse; shake off water.
