Fried Green Tomatoes

In a large bowl, whisk together the buttermilk, egg, and sugar
- 1 * 1 cup buttermilk
- 1 * 1 large egg
- 1 * 1 tablespoon sugar
- 2 * 2 medium green tomatoes (about 1 pound), cored and cut into 1/2-inch-thick wedges
- 1 * 1 cup stone-ground cornmeal
- 2 * 2 tablespoons all-purpose flour
- 3/4 * 3/4 teaspoon kosher salt
- 1/2 * 1/2 teaspoon dried thyme
- * Pinch of cayenne pepper
- * Freshly ground black pepper
- 4 * 4 slices raw bacon
- * Vegetable oil for frying
Roasted Stuffed Pork Tenderloin

Preheat the oven to 400 degrees F
- 1 * 1 pound smoked sausage, halved lengthwise and cut 1/4-inch slices, about 4 cups
- 2 * 2 cups chopped yellow onion (1 medium)
- * Salt
- * Freshly ground black pepper
- 4 * 4 cloves garlic
- 4 * 4 bay leaves
- 5 * 5 sprigs fresh thyme
- 3 * 3 teaspoons finely chopped parsley
- 8 * 8 cups chicken stock
- 1 * 1 pound black-eyed peas
- 2 * 2 tablespoons minced garlic
- 6 * 6 ounces bacon, chopped
- 1/2 * 1/2 cup celery
- * Freshly ground black pepper
- 2 * 2 dozen shucked oysters, chopped and liquid reserved
- * Essence, recipe follows
- 2 * 2 cups left-over crumbled cornbread
- 1 to 1 1/2 * 1 to 1 1/2 cups water
- 1/4 * 1/4 cup chopped green onions, green part only
- 4 * 4 pound pork tenderloin, trimmed, butterflied and pounded 1/2-inch thick
- 1 * 1 cup pure cane syrup
- 1 * 1 sweet potato, peeled, cut into curls and fried until golden brown
Essence (Emeril's Creole Seasoning)

Combine all ingredients thoroughly and store in an airtight jar or container
- 2 1/2 * 2 1/2 tablespoons paprika
- 2 * 2 tablespoons salt
- 2 * 2 tablespoons garlic powder
- 1 * 1 tablespoon black pepper
- 1 * 1 tablespoon onion powder
- 1 * 1 tablespoon cayenne pepper
- 1 * 1 tablespoon dried leaf oregano

- For the Cream Cheese Frosting:

- 1 * 1 teaspoon cocoa powder

- 1/2 * 1/2 cup kosher salt
- 3 * 3 tablespoons sugar
- 1 * 1 tablespoons light brown sugar
- 2 * 2 quarts water
- 4 * 4 (2-inch thick) pork chops, bone-in rib loin chops, split to bone
- 2 * 2 slices bacon, chopped
- 2 * 2 stalks celery, minced
- 1 * 1 small onion, minced
- 2 * 2 cloves garlic, minced
- 1 * 1 tablespoon freshly chopped rosemary leaves
- 1 * 1 tablespoon freshly chopped sage leaves
- 2 * 2 tablespoons freshly chopped parsley leaves
- 2 1/2 * 2 1/2 cups crumbled cornbread
- 1/4 * 1/4 cup dried cranberries
- 1/2 * 1/2 cup chicken broth
- * Salt and freshly ground black pepper

- 2 * 2 tablespoons minced garlic
- 4 * 4 jalapenos, seeded and diced

- 1-1/2 * 1-1/2 pounds ground beef or turkey
- 1/4 * 1/4 cup chopped onion
- 1 * 1 jar (26 ounces) spaghetti sauce
- 1 * 1 jar (4-1/2 ounces) sliced mushrooms, drained
- 1-1/2 * 1-1/2 teaspoons Italian seasoning
- 1 * 1 package (3-1/2 ounces) sliced pepperoni, halved
- 3 * 3 cups (12 ounces) shredded part-skim mozzarella cheese
