RASPBERRY PIE

try-make a day or two ahead and store well wrapped in the refrigerator
- RASPBERRY FILLING:
- 2 cups all purpose flour
- 1/2 cup icing sugar
- 3/4 butter/margarine, cut up
- 2 egg yolks (large
- 1/4 cup cold water
- 6 cups fresh raspberries
- 2/3 granulated sugar
- 1/4 cup cornstarch
- 1 tsp finely grated lemon zest
- 1 tbsp freshly squeezed lemon juice
- 3/4 tsp cinnamon
- 1 egg yolk (large)
- 2 tsp sugar
PARTY CHEESE BALL

Serve with assorted crackers
- 2 pkg (8 oz. each) cream cheese, softened
- 1 pkg (8 oz.) shredded sharp cheddar cheese
- 1 tbsp finely chopped onions
- 1 tbsp chopped red bell peppers
- 2 tsp worcestershire sauce
- 1 tsp lemon juice
- dash ground red pepper (cayenne)
- dash salt
- 1 cup chopped pecans

- 3 large onions, chopped
- 6 celery ribs, chopped
- 3 garlic cloves, minced
- 1/2 cup butter/margarine
- 4 1/2 cups chicken broth
- 1/2 cup minced fresh parsley
- 1 tbsp rubbed sage
- 1 1/2 tsp poultry seasoning
- 1 1/2 tsp salt
- 3/4 tsp pepper
- 1 1/2 pounds day-old french bread, cubed (27 cups)

- 3 tbsp lemon juice
- 1/4 cup white sugar

uSE AS A VEGGIE DIP OR SERVE WITH CRACKERS
- 16 LG. GREEN TOMATOES, CHOPPED FINE
- 2 RED PEPPERS, CHOPPED FINE
- 2 GREEN PEPPERS, CHOPPED FINE
- 8 ONIONS (GRIND FINE)
- ADD: 3 TBSP SALT
- LET MIXTURE STAND FOR 8 HOURS ... THEN DRAIN
- ADD: 3 CUPS VINEGAR
- LET MIXTURE STAND FOR 1 HOUR..... THEN DRAIN
- ADD: 3 CUPS WHITE SUGAR
- COOK ON LOW FOR 45 MINUTES. AT SLOW BOIL... THEN DRAIN
- ADD: 3 CUPS HELLMANS MAYONNAISE (DO NOT SUBSTITUTE)
- 2 CUPS LITE MIRACLE WHIP
- 3/4 CUP PREPARED MUSTARD

- 5-1/2 lbs tomatoes, peeled
- 1 tbsp bottled lemon juice, (not fresh), per pint
- 1/2 tsp coarse salt, per pint
- 1/2 tsp granulated sugar, per pint
SPINACH SALAD - FAVORITE

- 5 cups torn spinach
- 2 cups sliced mushrooms
- 1 can (8 ounces) sliced water chestnuts, drained
- 1 cup bean sprouts
- 1/2 cup thinly sliced red onion wedges
- 4 slices bacon, crisply cooked, crumbled
- 2 hard-cooked eggs, chopped
- 3/4 cup kraft catalina dressing
