FRUIT PIZZA

wow everyone with this soft, chewy, cookie-like crust topped with creamy filling and delectable fresh fruit
- CRUST
- 1 yellow cake mix (1 layer size)
- 1 large egg, fork-beaten
- 2 tbsp water
- 2 tbsp hard margarine, softened
- 2 tbsp brown sugar, packed
- 1/4 cup finely chopped walnuts
- FILLING
- 12 oz. cream cheese softened
- 3/4 cup icing sugar
- 1 tsp vanilla
- TOPPING
- 20 seedless red grapes
- 1/2 ripe honedew melon, sliced
- 1/2 can mandarin orange segments (10 oz. size) drained
- 4 fresh strawberries, sliced
- 3 seedless purple grapes, halved
- GLAZE
- 1/4 cup apricot jam (or orange marmalade)
- 1 tbsp water

- 1 cup peeled, pitted and mashed peaches, about 1 lb
- 2-3/4 cups granulated sugar
- 1/2 cup light corn syrup
- 1 tbsp lemon juice, fresh or bottled
- 3 oz. liquid fruit pectin, fresh or bottled
CHICKEN SOUP

- 1 lb chicken parts, skin removed
- (I use boneless chicken)
- 6 cups water
- 1 tsp salt
- 1/4 tsp pepper
- 1 bay leaf
- 2 medium potatoes, peeled and diced
- 1 medium carrot, grated
- 1 tbsp chicken bouillon powder
- 1 tsp parsley
