Preheat oven to 350°. Combine sugar and butter in a bowl; beat at medium speed of a mixer until well-blended
- 1 cup sugar
- 1/4 cup light butter, softened
- 1 2/3 cups mashed ripe banana (about 3 bananas)
- 1/4 cup skim milk
- 1/4 cup low-fat sour cream
- 2 large egg whites
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt

- 1 t. cinnamon
- 1 t. grated orange rind

- 1 t. vanilla
- 3/4 c. sifted powdered sugar
- 1 T. plus 1 t. unsweetened orange juice

- 1 1/2 cups vertically sliced onion

- 2 pounds medium red potatoes, peeled and cut into 1/8-inch slices
- 1/2 teaspoon salt, divided
- 1/4 teaspoon pepper, divided
- 2 tablespoons all-purpose flour
- 3/4 cup skim milk
- 1/2 cup (2 ounces) grated Swiss or colby cheese

- 1 cup all-purpose flour
- 1 cup cornmeal
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1-1/2 cups (6 ounces) shredded reduced-fat Mexican cheese blend
- 1 can (4 ounces) chopped green chilies
- 1 jar (4 ounces) diced pimientos, drained
