Triple Mashed Vegetables

- 1 medium rutabaga, peeled and cubed (about 3 cups)
- 6 medium potatoes, peeled and cubed (3-1/2 cups)
- 6 medium carrots, peeled and sliced (3 cups)

- 3/4 teaspoon salt
- 1/4 teaspoon pepper

Process oats in food processor until coarsely ground
- 1 1/4 c. regular oats
- 1/2 c. firmly packed brown sugar
- 2 t. B.P.
- 1 1/2 t. cinnamon
- 1/2 c. skim milk
- 1/2 c. applesauce
- 1 t. vanilla
- 1 1/2 c. chopped peeled cooking apple (about 1 lb) divided
- 1 T. brown sugar
- 1 1/4 c. apple juice
- 1/4 c. sliced almonds
Possum Pie

In a small bowl, beat cream cheese and sugar until smooth
- 2 packages (3 ounces each) cream cheese, softened
- 3/4 cup confectioners' sugar
- 1 graham cracker crust (9 inches)
- 1/4 cup chopped pecans
- 1-3/4 cups cold milk
- 3/4 teaspoon vanilla extract
- 1/4 cup instant vanilla pudding mix
- 1/3 cup instant chocolate pudding mix
- 1/2 cup heavy whipping cream, whipped
- 12 to 16 pecan halves
