Heat oil in a Dutch oven over medium-high heat
- 1 teaspoon olive oil
- 2 ounces pancetta, chopped
- 1 cup chopped onion
- 3 garlic cloves, minced
- 2 cups cubed peeled acorn squash
- 2 cups diced peeled red potato
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 1 teaspoon dried basil
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon dried thyme
- 1 (28-ounce) can whole tomatoes, drained and chopped
- 2 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
- 4 cups chopped kale
- 1 (15.5-ounce) can navy beans or other small white beans, rinsed and drained

Bring to boil oleo through water
- frosting:
- 1 stick oleo
- 4 T. cocoa
- 1/2 c. shortening
- 1 c. water
- 2 c. sugar
- 2 c. flour
- 1 t. soda
- 1 t. cinnimon
- 1 t. salt
- 1/2 c. buttermilk
- 2 eggs
- 1 t. vanilla
- 1 package powdered sugar
- 1 t. vanilla
- 1 stick oleo
- 4 T. cocoa
- 6 T. milk
Mexican Tomato-Bean Soup with Corn Dumplings

Heat 2 t. oil in Dutch oven
- Dumplings:
- 2 t. olive oil
- 1 C. chopped onion
- 1 T. chili powder
- 2 t. bottled minced garlic
- 2 C. vegetable broth
- 1 C. water
- 1/2 t. dried oregano
- 1/4 t. black pepper
- 1 (15.5 oz) chickpeas, rinsed and drained
- 1 (14.5 oz) diced tomatoes (do not drain)
- 1/3 C. cornmeal
- 1/8 t. salt
- 3 T. hot water
- 1 t. olive oil
- Garnishes:
- 2 T chopped fresh cilantro
- 1 T. fresh lime juice
- 1/4 C. crumbled queso fresco or feta cheese
Banana Graham Dessert

In a bowl, beat pudding mix and milk on low speed for 2 minutes
- 1 package (1.5 ounces) instant sugar-free vanilla pudding mix
- 2-3/4 cups fat-free milk
- 1 cup (8 ounces) fat-free sour cream
- 12 whole reduced-fat graham crackers
- 2 large firm bananas, sliced

In a large bowl, combine 3/4 cup sugar, flour, 1/4 cup cocoa, baking powder and salt
- 1-1/4 cups sugar, divided
- 1 cup all-purpose flour
- 1/2 cup Hershey's® Cocoa, divided
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/3 cup butter, melted
- 1-1/2 teaspoons vanilla extract
- 1/2 cup packed light brown sugar
- 1-1/4 cups hot water
- Whipped topping
- Maraschino cherries, optional
Jim's Chili-Chicken Soup

Heat oil in a large saucepan over medium-high heat
- 1 teaspoon olive oil
- ½ cup chopped onion
- 3 garlic cloves, minced
- 1 (14.5 oz) can no salt added diced tomatoes, undrained
- 1 ½ cups shredded cooked chicken breast (about 1/2 pound)
- ¼ cup taco sauce
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper
- ½ cup water
- 3 (15.75 oz) cans fat-free, less-sodium chicken broth
- 1 (15 ½ oz) can chickpeas (garbanzo beans) drained
- 1 (4.5 oz) can chopped green chilies, drained
- 1 cup cooked long grain rice

Preheat oven to 350*. Combine first 6 ingredients in a large bowl, and make a well in center of mixture
- 1 cup. all-purpose flour
- 1 cup. whole-wheat flour
- 1/4 cup. toasted wheat germ
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/3 cups. mashed ripe banana ( about 3 large )
- 2/3 cup. sugar
- 1/4 cup. vegetable oil
- 1 large egg, lightly beaten
Roasted Vegetables with Sun-Dried Tomato Pesto

- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- Dash of pepper
- 2 cups (1/2-inch) sliced red potato (about 10 ounces)
- 2 cups (1/2-inch) diagonally sliced zucchini or broccoli
- 1 1/2 cups halved mushrooms
- 1 (1-pound) eggplant, cut diagonally into 1/2-inch slices
- Vegetable cooking spray
- 3 tablespoons Sun-dried Tomato Pesto
- Basil sprigs (optional)

- 2 small pkg vanilla instant pudding
- 1 16oz cool whip
- 2 small can mandarin oranges, drained
- 1 pkg keebler fudge stripe cookies
