In a bowl, combine the beans, onion, parsley and mint
- 1 can (15 ounces) garbanzo beans , rinsed and drained
- 1/2 cup chopped red onion
- 2 tablespoons minced fresh parsley
- 1 tablespoon minced fresh mint
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Leaf lettuce
Sautéed Green Beans and Onions with Bacon

- 1 pound green beans, trimmed and halved crosswise
- 4 bacon slices
- 1 (16-ounce) bottle cocktail onions, drained
- 2 teaspoons sugar
- 1/2 teaspoon dried thyme
- 1 1/2 tablespoons cider vinegar
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
Chef's Garden Salad

Place 3 cups of lettuce in bottom of a 3 qt
- 6 C. torn mixed salad greens, iceberg lettuce or Boston lettuce
- 1 (15 oz) garbanzo beans, rinsed and drained
- 1 C. shredded carrots
- 3 medium tomatoes, seeded and chopped or cut into thin wedges or 10 cherry tomatoes, halved
- 1 (9 oz) frozen whole kernel corn
- 1 1/2 C. shredded sharp cheddar cheese (6 oz)
- 1 C. broccoli florets
- 1/4 C. thinly slicedd green onions
- 2 slices bacon, crisp cooked, drained and crumbled or 1/4 C. finely chopped ham or Canadian bacon
- 1 (15 oz) cannellini beans, rinsed and drained or one 10 oz frozen peas
- 2 hard cooked eggs, quartered or coarsely chopped
- 2 T. fresh parsley (optional)
- Desired salad dressing
Orange and Cream Ice

Combine first 4 ingredients in a medium bowl; stir until sugar dissolves
- 1/2 teaspoon finely grated orange rind
- 2 cups fresh orange juice (about 7 oranges)
- 2 tablespoons sugar
- 2 tablespoons fresh lemon juice
- 1 cup 2% reduced-fat milk
- 4 teaspoons sugar
- 1/4 teaspoon vanilla extract
Raspberry Angel Souffle

Coat 8 (6 oz) souffle dishes or custard cups with Pam; sprinkle with 1/4 t
- 1/2 c. plus 2 t. sugar, divided
- 5 oz angel food cake
- 1 (10 oz) pkg frozen raspberries in light syrup, thawed
- 5 egg whites
- 1/8 t. cream of tartar
- 1/4 t. almond extract
- 1 c. vanilla lowfat frozen yogurt
Winter Squash Casserole

Preheat oven to 400°. Arrange squash pieces in a single layer on a jelly-roll pan
- 10 cup (1-inch) cubed peeled butternut squash (about 8 pounds)
- 2 teaspoons olive oil
- 1/4 cup fresh orange juice
- 2 tablespoons brown sugar
- 2 tablespoons brandy
- 1 tablespoon butter
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup dried currants
- Cooking spray
- 2 tablespoons all-purpose flour
- 2 tablespoons whole wheat flour
- 2 tablespoons chilled butter, cut into small pieces
- 3 tablespoons chopped pecans
Strawberry Heaven

- 1 Angel food cake (10 ")
- Cut into 3 horizontal layers
- 2 c Frozen strawberries; thawed
- 2 c. fresh strawberries, sliced
- 1 tb Skim milk
- 12 oz Cool Whip. Free; thawed
Senatorial Bean Soup

Sort and wash beans, and place in a large Dutch oven
- 3 cup dried navy beans
- 2 tablespoons margarine
- 2 1/2 cups chopped leek
- 2 cups sliced carrot
- 1 cup thinly sliced celery
- 1 cup diced cooked ham (such as Light & Lean)
- 4 garlic cloves, minced
- 8 cups water
- 2 teaspoons chicken-flavored bouillon granules
- 1 teaspoon beef-flavored bouillon granules
- 1 teaspoon dried rubbed sage
- 2 bay leaves
- Celery leaves (optional)
Honey-Baked Root Vegetables

- 2 tablespoons honey
- 1 tablespoon margarine, melted
- 1/4 teaspoon salt
- 1 pound carrots, cut into 4 x 1/2-inch sticks
- 1 small rutabaga (about 1 pound), cut into 4 x 1/2-inch sticks

- 1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
