Toasted Millet and Confetti Vegetable Salad with Sesame and Soy Dressing

To prepare dressing, combine the first 8 ingredients in a small bowl
- Dressing:
- 3 tablespoons rice vinegar
- 1 tablespoon cold water
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon canola oil
- 1/2 teaspoon dark sesame oil
- 1 teaspoon grated peeled fresh ginger
- 1/2 teaspoon salt
- 1 garlic clove, minced
- Salad:
- 1 cup uncooked millet
- 2 cups water
- 3 tablespoons chopped walnuts
- 1 tablespoon low-sodium soy sauce
- 1 cup diced carrot
- 1 cup chopped fresh cilantro
- 1/2 cup finely chopped red bell pepper
- 1/2 cup finely chopped green bell pepper
- 1/2 cup thinly sliced green onions
- 1 tablespoon finely chopped seeded jalapeño pepper
Cranberry-Apple Crumble

Preheat oven to 350°. To prepare filling, combine the first 3 ingredients, tossing well
- Filling:
- 1/4 cup sweetened dried cranberries
- 1 tablespoon fresh lemon juice
- 4 Braeburn apples, peeled, cored, and chopped (about 4 cups)
- Cooking spray
- Topping:
- 1/4 cup all-purpose flour (about 1 ounce)
- 6 tablespoons brown sugar
- 6 tablespoons regular oats
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 3 tablespoons chilled butter, cut into small pieces
- Remaining ingredient:
- 4 cups vanilla light ice cream
Peanut Butter Pudding

In a saucepan, combine sugar, cornstarch and salt
- 1/3 cup sugar
- 4-1/2 teaspoons cornstarch
- 1/4 teaspoon salt
- 1-1/2 cups milk
- 1/2 cup half-and-half cream
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- Whipped cream, optional
Chipotle Chicken Tortilla Soup

- 1 tablespoon canola oil
- 1 1/2 teaspoons bottled minced garlic
- 3/4 pound chicken breast tenders, cut into bite-sized pieces
- 1 teaspoon chipotle chile powder, may be too hot
- 1 teaspoon ground cumin
- 1 cup water
- 1/4 teaspoon salt
- 1 (14-ounce) can fat-free, less-sodium chicken broth
- 1 (14.5-ounce) can fire roasted tomatoes, undrained
- 1 C. frozen corn
- 1 can black beans, rinsed and drained
- 1 cup crushed baked tortilla chips
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into 4 wedges
Potato Leek Soup

In a large saucepan, combine the first eight ingredients and add enough water just to cover
- 2 cups cubed peeled potatoes
- 1 medium leek (white and 1 inch of green portion), thinly sliced
- 1 medium turnip, peeled and cubed
- 1 celery rib with leaves, chopped
- 1/4 cup shredded carrot
- 1/4 cup chopped onion
- 1/4 cup diced fully cooked lean ham
- 1 teaspoon reduced-sodium chicken bouillon granules
- 1 tablespoon butter
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1-1/4 cups fat-free milk
- 3/4 cup fat-free evaporated milk
Peanut Butter "Cheese Ball"

Beat cream cheese, powdered sugar, peanut butter and brown sugar in large mixing bowl until blended
- 1 (8 oz) cream cheese, at room temperature
- 1 C. Powdered sugar
- 3/4 C. creamy peanut butter (not all natural or low fat
- 3 T. brown sugar, packed
- 1 1/2 C. milk chocolate chips
- Graham cracker sticks, teddy grahams, Scooby Doo snacks or apple slices
Creamy Celery Seed Dressing

- 1/4 C. plus 2 T. reduced calorie mayonnaise
- 1/4 C. plus 2 T. plain nonfat yogurt
- 2 T. sugar
- 2 T. white vinegar
- 1 T. prepared mustard
- 1/4 t. celery seeds
- 1/8 t. salt
- 1/8 t. pepper

- 1 c. sugar
- 1/2 c. light brown sugar
- 1 t. vanilla
- 2 eggs
- 2 c. flour

- 2 t. finely shredded orange peel
- 3/4 c. raspberries
- 3/4 c. blueberries
