- 1 tablespoon fat-free milk
- 10 small soft caramel candies
- 2 tablespoons coarsely chopped pecans
- 4 cups vanilla low-fat frozen yogurt
Cantina Pinto Beans

Sort beans and rinse with cold water
- 2 cups (1 pound) dried pinto beans
- 2 cans (14-1/2 ounces each) reduced-sodium chicken broth
- 2 celery ribs, diced
- 1/4 cup diced onion
- 1/4 cup diced green pepper
- 1 teaspoon ground cumin
- 1/2 teaspoon rubbed sage
- 1/4 teaspoon crushed red pepper flakes
- 2 bay leaves
- 1 garlic clove, minced
- 2 cans (14-1/2 ounces each) Mexican diced tomatoes
- 1/2 teaspoon salt
- Minced fresh parsley
Spanish Rice

In a large skillet over medium heat, saute rice in oil until lightly browned
- 1 cup uncooked long grain rice
- 2 tablespoons canola oil
- 1 small onion, chopped
- 1 garlic clove, minced
- 1/2 teaspoon salt, optional
- 1 cup water
- 1 cup chicken or vegetable broth
- 2 large tomatoes, peeled and chopped
- 1/3 cup frozen peas, thawed
- 1/3 cup diced cooked carrots
Bean-and-Pasta Stew

Combine the first 7 ingredients in a large Dutch oven, and bring to a boil
- 2 cups water
- 1/2 cup sliced carrot
- 1 tablespoon chili powder
- 2 tablespoons tomato paste
- 1 (14.5-ounce) can no-salt-added stewed tomatoes
- 3 (10 1/2-ounce) cans low-salt chicken broth
- 1 (4.9-ounce) package bean medley with pasta soup mix (such as Kettle Creations)
- 2 cups torn spinach
Barley, Corn, and Provolone Bake

Combine water and 1/4 t. salt in large saucepan; bring to boil
- 3 1/2 C. water
- 3/4 t. salt, divided
- 1 C. uncooked pearl barley
- 1 t. olive oil
- 1 1/2 C. chopped sweet onion
- 1 C. fresh corn kernels (about 2 ears)
- 1 C. diced red bell pepper (about 1 large)
- 1/4 C. finely chopped fresh parsley
- 2 t. minced thyme or 1/2 t. dried
- 1/4 t. black pepper
- 3/4 C. (3 oz) shredded sharp provolone, fontina or part skim mozzarella

Thinly slice the potatoes and place in a greased shallow 2-qt
- 4 large unpeeled baking potatoes
- 1/4 cup butter, cubed
- 1 tablespoon grated onion
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/8 teaspoon pepper
- 1 cup (4 ounces) shredded cheddar cheese
- 1 tablespoon chopped fresh parsley
Roasted Bananas with Brown Sugar Walnut Glaze

Preheat oven to 450°. Combine first 4 ingredients in a bowl, and set aside
- 1/3 cup packed brown sugar
- 1/4 cup fresh lemon juice
- 2 tablespoons reduced-calorie margarine, melted
- 1/4 teaspoon ground cinnamon
- 4 large firm ripe bananas (about 1 1/2 pounds)

- 1/4 cup chopped walnuts, toasted
- 1 1/2 cups vanilla low-fat frozen yogurt

- 1 cup (4 ounces) shredded reduced-fat cheddar cheese, divided
- 2 teaspoons poppy seeds

- 2 teaspoons grated orange rind
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1 cup egg substitute
- 2 (12-ounce) cans evaporated skimmed milk
