Marinade for Tuna

Marinade at least 30 minutes, turning several times
- Large pod of garlic ~ or 2 small
- 2 oz. Olive oil
- 1 oz wine vinegar
- Worcestershire
- Lemon pepper
- 2 oz lemon juice
- 1 tsp ginger
Shrimp Aspic
By mlmason
Dissolve jello in boiling water
- 2 3oz packages lemon jello
- 2 cups boiling water
- 2 8 oz cans tomato sauce
- 1/2 cup finely chopped onion
- 1 cup finely chopped celery
- 2 T vinegar
- 1 t salt
- 1/4 t pepper
- 3 cups boiled shrimp
Cheese Straws

Mix grated cheese and soft butter
- 1 lb. NY State cheese – grated
- 1 stick butter
- 1 3/4 cups flour
- 1/4 tsp salt
- 1/4 + tsp. red pepper
- 1/2 tsp. Paprika
Bruschetta - 2

Bake toast for 5 minutes., turn slices over and brush with olive oil
- optional:
- Italian bread, cut diagonally into 6 slices
- 3 cloves of garlic
- 1 T olive oil
- 1/3 tsp dried oregano
- 1/4 tsp salt
- 1 cup fresh or dried chopped tomato and Parmesan cheese
Shrimp A La Creole

Clean shrimp and boil for 5 minutes and drain! Use iron skillet
- 4 lbs. shrimp
- 4 green bell peppers
- 1 can Italian tomato paste
- 1 bunch shallots or 1 large onion
- 1/2 small pod garlic, sliced
- 3/4 cup salad oil
- 3 heaping tablespoons flour
- salt & pepper to taste
Grilled Citrus Salmon

Heat grill to med high. Lightly brush lemon & lime slices with oil
- 1 1/2 lemons, sliced
- 1 1/2 limes, sliced
- 1/4 c olive oil
- 1/4 c silvered fresh basil leaves
- 1/4 c silvered fresh mint leaves
- 1 salmon filet (approx 1 3/4 lb)

- 1 (10 oz) can whole cranberry sauce
- 1/2 t grated orange rind
- 1 cup Quick Oats
- 1/2 cup flour
- 1/2 cup brown sugar, firmly packed
- 1/2 t cinnamon

- 2 bottles soy sauce
- 1/3 cup brown sugar
- 1/2 t ginger
- 2 garlic cloves
- 2 T oil
- 1 inch pork chops
Macaroni Pie

Cook macaroni about 10 minutes
- 1 cup uncooked macaroni
- 1 beaten egg
- 1 1/2 cups milk
- salt & pepper
- 1 tsp melted margarine
- 1/4 lb. diced cheese
