Panco Crusted Chicken Schnitzel

1. Set the flour, eggs and panko in three separate shallow bowls
- INGREDIENTS
- 1 . 1 cup flour
- 2 . 3 eggs, beaten
- 3 . 2 cups panko
- 4 . 4 skinless, boneless chicken breast halves (about 6 ounces each), butterflied and pounded 1/4-inch-thick
- 5 . Salt and freshly ground pepper
- 6 . 1/2 cup canola oil
- 7 . 6 tablespoons butter
- 8 . 2 teaspoons capers
- 9 . 2 tablespoons lemon juice
- 10 . 1 tablespoon chopped parsley

Special K Bars

Mix cornn syrup & sugar, stir and bring to a boil
- 1 cup light corn syrup
- 1 cup sugar
- 1 cup peanut butter
- 6 cups Special K cereal
- 6 ozs. semi-sweet chocolate chips
- 6 ozs. butterscotch chips
Strawberry Ice Box Cake

Add sugar to gelatin; dissolve in 2 cups boiling water
- 1/2 cup sugar
- 2 small boxes strawberry gelatin
- 2 cups boiling water
- 2 small boxes frozen chopped strawberries
- 1 small can crushed pineapple, drained
- 1 large angel food cake, torn in small pieces
- 1 pint heavy cream, whipped
Percolator Punch

In the top of a perculator place spices In the bottoin of the perculator put the liquids Perk 10 min

- 1 1/2 t. whole allspice
- 3 sticks of cinnamon
- 1/4 t. salt
- 1/2 cup of brown sugar
- 2 1/4 cups unsweetened pineapple juice or apple juice
- 1 3/4 cups water ~ do not use when using apple juice
- 2 cups cranberry juice
Lemon Squares

Mix first 3 ingredients well
- 1/2 cup butter, softened
- 1 cup sifted flour
- 1/4 cup confectionate sugar
- 1 cup sugar
- 2 T flour
- 1/2 t baking powder
- 2 eggs (slightly beaten)
- 4 - 5 T lemon juice
- Grated rind of lemon
Bourbon Pecan Pastries

Preheat oven to 350°. In a small mixing bowl, mix brown sugar, butter and bourbon until combined

- 2 tablespoons butter, melted

Lexington-Style Barbecue Sauce

Combine all ingredients in saucepan Bring to a boil, then simmer & stir until sugar is dissolved
- 1 1/2 cups cider vinegar
- 1/2 cup ketchup
- 1 t salt
- 1/2 t ground red pepper
- 1/8 t red pepper flakes
- 1 T granulated sugar
- 1/2 cup water

Saute first 5 ingredients in olive oil in a Dutch oven over medium heat 3 minutes
- 1 clove garlic, minced
- 1 4 cup chopped onion
- 1/2 cup chopped green pepper
- 1 cup sliced mushrooms
- 3 cups sliced zucchini
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon dried whole oregano
- 1/4 teaspoon dried whole basil
- 1 (14 1/2-ounce) can stewed tomatoes, undrained and chopped
- 2 cups cooked rotini noodles (cooked without salt or fat)
- 1/4 cup grated Parmesan cheese
