Mac and Cheese

WHISK FLOUR INTO BUTTER Preheat oven to 400°
- 2 cups milk
- 2 Tbsp. butter
- 2 Tbsp. all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 (l0-oz.) block extra sharp Cheddar cheese. shredded
- 1/8 tsp. ground red pepper (optional)
- 1/2 (16-oz.) package elbow macaroni. cooked
Blackberry Cobbler

Stir together first 4 ingredients; let mixture stand 10 minutes or until sugar dissolves
- 8 cups fresh blackberries
- 2 1/4 cups sugar
- 1/3 cup all-purpose flour
- 1 teaspoon lemon juice
- Pastry, divided
- 1/4 cup butter or margarine, cut up
- Sugar (optional)
Macoroni 'N' Cheese

Dijon Vinaigrette Dressing

Mix Dijon, vinegar & pinch of salt until well blended
- 1 Tab Dijon mustard
- 2 -3 Tab balsamic vinegar
- 3 Tab extra virgin olive oil
- Salt & pepper
Pork Chops - Lemony Fried

Combine first 3 ingredients in a shallow dish; dredge pork chops in flour mixture
- 1/2 cup all-purpose flour
- 1 teaspoon seasoned salt
- 1 teaspoon seasoned pepper
- 1 1/2 pounds wafer-thin boneless pork chops (about 12)
- 1/4 cup vegetable oil
- 3/4 cup chicken broth
- 1/4 cup fresh lemon juice
Steak Diane

Trim steaks of all fat. If desired flatten steaks between 2 pieces of wax paper with mallet until 1/4 inch thick
- 6 boneless sirloin or shell steaks (about 1/2^ thick)
- salt
- pepper
- 8 T butter
- 1/4 cup minced shallots or green onions
- 1 t dry mustard
- 1 T worcestershire sauce
- 2 T lemon juice
- 2 T chopped parsley
- 1 T finely cut chives
Squash Casserole ~ Two Cheese

Cook squash in boiling water to cover in a large skillet 8 to 10 minutes or just until tender
- 4 pounds yellow squash, sliced
- 4 tablespoons butter or margarine, divided
- 1 large sweet onion, finely chopped
- 2 garlic cloves, minced
- 2 1/2 cups soft breadcrumbs, divided
- 1 1/4 cups shredded Parmesan cheese, divided
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup chopped fresh chives
- 1/2 cup minced fresh parsley
- 1 (8-ounce) container sour cream
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 2 large eggs, lightly beaten
- 1/4 teaspoon garlic salt
Queen City Coffee Cake

To soften cream cheese add sugar, egg and vanilla and cream together
- 2 cans reduced fat crescent rolls
- 2 8 oz pkg fat free cream cheese
- 1 egg
- 1 tsp vanilla
- 1/2 c. melted butter
- 1/2 c brown sugar
- 1 tsp cinnamon
- 3/4 c. chopped pecans
Pumpkin Squares

mix pumpkin with the next 5 ingredients (down through nutmeg), Line 9 x 13 pan with waxed paper after greasing
- 15 oz can Pumpkin (not pie mix)
- 1/2 cup sugar
- 3 eggs
- 1 can condensed milk
- 1 tsp cinnamon
- l/2 tsp nutmeg
- 1 box yellow cake mix
- 1 cup chopped pecans
- 1 cup melted butter
Mashed Potatoes w/ Cream cheese

Peel potatoes, and cut into 1-inch cubes
- 5 pounds baking potatoes
- 2 (3-ounce) packages cream cheese, softened
- 1 (8-ounce) container sour cream
- 1/2 cup butter or margarine, softened
- 1/2 cup milk
- 2 teaspoons onion salt
- Garnish: paprika or chopped fresh parsley
